  1. No it wont work in a conical tank because the solids will still be there will fermenting even if just for a little bit of time. I add copper after the fermenting
  2. PeteB I use high yielding apples for my juice I tend to lean towards Jonagold apples as they produce the most juice and the juice is very light in colour and very sweet similar to a honeycrisp apple, I prefer the jonagold for fresh eating and juicing and for fermenting. Not sure what you want me to expand on but I find that if I do not filter the fresh pressed juice very well right away then when I start fermenting and the solids in the juice will settle at the bottom of the tank and the hard cider produced will be reductive from the solids rotting at the bottom it will give a rotten egg smell and flavour to the hard cider. it can be fixed by adding copper to the process but I rather not have to do that. not sure if that helps or not
  3. I am wanting to make some peach ALC next summer as I had a huge over production this year and didn't know what to do with all of them, the largest harvest ever. I am not sure what the best way is to break them down after I have pressed them I want to keep the juice nice and clear like when they are canned but I also want to be able to get the most juice I can without over pressing. Any Ideas?
  4. Go with the information from Pano I just did 1000litres of hard cider and my conversion was 13pounds to 3.78litres of apple juice, I suggest filtering before fermenting as there is lots of pulp that can make your fermentation stick and be reductive,

  9. It is hard, so far I can only run the farm and have been working at starting the distillery for about 4 years now, not enough daylight hours in a day to do both
  10. I am curious as to where most people are purchasing their SS Tanks. I am looking to purchase some tanks, I would like some open top and closed tanks along with some tanks that have jackets for heating and cooling, any suggestions on where to purchase would be great.
  11. I was thinking of making a crusher with adjustable rollers so that it doesnt crush the pits but breaks the skin of the fruit open. a friend of mine is good at this sort of thing. just make one of the rollers adjustable and keep the other in place, the fewere moving parts the better I think

I am interested in fermenting stone fruits such as, peaches, apricots, plums, and cherries, what is the best way to do this without breaking the pits when processing them, is their a fast way to do this. I dont want to have split stones in the mash for fermenting. I have a large supply of these fruits and want to use them, but not sure how to get the flesh from the stones
