  1. Bold choice. I don't presume to know what your hourly rate is, ou how long it'd take you to build a fully function program but it's definitely saved me time and money. I can't speak for DS anymore (been 15 months since I've used it) but WS allows - and encourages - you to save your information in readily downloadable files.

  3. right, or you can just run it through a glass still and go from that - but I'm trying to figure out what instances it's commonly needed in without buying all of that equipment. For example, adding sugar at <2%, barrel aging in wine vs whiskey barrels, distilling gin, cream liqueurs (obviously), that kind of stuff. I just got a DMA and a lab still so I guess I'll be finding out soon! Cheers
  4. captainKB - are you boiling the mash/wort prior to fermentation in the manner that breweries do (not all distilleries boil mash prior to fermentation)? Have you tried anti-foam agents in the pot?
  5. Hops are not a normal ingredient in whiskey so it should fall under the DSS category - I think. I think the previous reference to gin is using the malt base with hops in the "gin basket."
  6. if your evacuation / drain and sewage can handle the grain, go grain-in. If it can't, and you can afford it, go grain-in and separate the DDSG post distillation.
  7. The FDA does not require an item used in production to have GRAS. The GRAS list just says that they guarantee those ingredients, compounds, etc to be safe. If what you want to use is not listed as GRAS you need to contact the FDA to ensure that it is not prohibited, however. A recent conversation with the TTB and FDA was fairly productive here. I wanted to use an ingredient not listed and, after a short conversation, was given permission. However, this ingredient is not, and will not, be listed as GRAS for beverage purposes without some serious work.
  8. Given the date published, I would assume 50% / 100 P guaranteed by hydrometer as opposed to gunpowder and spirit.
  9. @Blackheart - that's my concern, that and our on-prem in significantly smaller than our direct sales that it wouldn't even matter. Full insurance for every employee over 20hrs here.. Gotta be a better use for them than tossing them though? Solar panels like the "beer-can effect" in Bio-Dome??
  10. dhdunbar wins the internet of the day! Grehorst - are you using a standard commercial dishwasher on a sanitary mode or is it a specialty machine? Also, what label company did you use and have you had any problems with labels coming unglued do to heat or other elements? PBW didn't even attempt to remove the glue. Maybe bleach? I've heard ammonia works but neither sound like a particularly good idea..
  11. Personally, I'd prefer to send the bottles to an art school and let them make something fancy... I'll call up our health department and, code permitting, set up a way to reuse these bottles. I'll let you know if I can find a way to make this not prohibitively expensive. I am not overly optimistic at this point but I'll at least have a definitive answer! Thanks for the comments.
  12. Jedd, I believe that is referring to a system similar to how growlers are treated at breweries. I don't mean simply re-capping and re-filling. That is not what I'm considering. I mean removing the labels, washing, and running through processing again. It would effectively be the same as "buying" new bottles and receiving them again.
  13. Our glass is actually really expensive (total package cost is over $4). I agree that local health may have an issue but I didn't know if there was anything on the federal level?
  14. Any luck? I would think the TTB would take issue in the containers being built to be transportable. Ventilation would be a simple screen window (small) or just open drier vent
  15. I've been asked this several times and I keep shutting it down because I don't want to deal with removing the labels and I feel like there will be a lot of paperwork involved but... Is anybody reusing their packaging, i.e. glass bottles? This would only be for a few accounts that are concerned with it but I feel like the savings in packaging would be out-weighed by the cost in labor hours. Anyway, if anybody has information about this or can link me to a thread (searched but didn't find anything) I'd be grateful.
  16. We've been using a MiniJet triple plate filter but will probably switch to the 5 micron TCW cartridge. Seems a lot cleaner and less finicky. it would be super awesome if the pump on our XpressFill is strong enough to pull through the cartridge - but that seems too convenient.

Comparatively, I asked the TTB to weigh in on this (pun intended) and this is the response I got: "Unfortunately we don’t have much experience with industrial processes and blending techniques and our expertise is more on proof determination of final products. Can you estimate the final proof from the volume and proof of the blending ingredients? Is adding water an option for lowering the final proof? These are the only solutions that come to my mind." So yeah, I would think that a program to get us non-engineers on a steadier path would be helpful to say the least.
  18. I've used Distillery Solutions and Whiskey Resources. Both have their pro's and con's. If Dehner is trying to decide if there is a market for distillery software (which it would appear is the intent here) then, yes obviously there is. Are either worth the money? We are in year two of Whiskey Systems - it's brought me considerable peace of mind. Since you clearly have the resources to handle this, why don't you spend a few months on it and try it yourself? Maybe Donald will be nice enough (despite the insults) to let you try before you buy. The "red rocket" can wait till Christmas.
  19. It'd have to got a lot further west but I'm interested. I'm assuming it's 2 barrels per pallet?
  20. Nepa - are you purging with gas to limit the proof reduction from residual water or have you found that it is a negligible issue?
  21. I totally missed this - I'm guessing somebody recently found out about the Jefferson Ocean aged?
