  1. Our current method is to stack the prepared barrel on double-barrel metal racks and fill in place. We add XX amount by weight to a drum and pump that into the barrel. The racks can be easily moved by pallet jack stacked 2 high (4 total barrels). Doesn't help you get pallets off the truck though. Sounds like you'll need a forklift or to modify the loading dock area.
  2. Boston - That was pretty heavy. Thank you. I may have misread this so please correct me if I'm wrong. It sounded like you were saying that "craft" and "bomb shelter" (which I presume means long/indefinite shelf life) are not very compatible. To retain proper flavor, a "craft canned cocktail" would have a shorter shelf life, say 3-6 months? We've got kegged highballs out here (thanks Suntory) which seems like a good place to start - or at least a lot more simple than a canned mai tai!

  5. Get a hold of Pall or 3M or any number of filter manufacturers and get the appropriate housing. Filters are made for different purposes and have filter housings to match them. If you're set on buying cheap parts made for use with different chemicals, then your standards for the finished product should be equally low. ScottLab has a facility in Canada and can get you everything you need.

  7. probably colloidal instability. Pall filters may help (can't speak to your exact specifications). It's also possible that your filters are getting overloaded - it may help to rack the spirit too. Are they absolute or nominally rated?
  8. We have a highly variable raw material so our sugar (and thus ABV) can vary from batch to batch. When we run LW we dillute to get a consistent hearts run. It's more practical for our setup than regulating the fermentation gravity.

  11. I've seen the references for oak chips but I haven't found them for rum yet. Am I not searching hard enough? "Treatment with wood. The words "colored and flavored with wood (insert chips, slabs, etc., as appropriate)" shall be stated as a part of the class and type designation for whisky and brandy treated, in whole or in part, with wood through percolations, or otherwise, during distillation or storage, other than through contact with the oak container." In reference to the OP - it's my understanding (note: not gospel, I don't work for them) that Bacardi uses neutral barrels (barrels originally used for whiskey but no longer have significant flavor contributions) for aging their white spirits and then carbon filters the color out.
  12. Hi all, I'm looking for a thermowell and digital temp probe for our Artisan Still dephleg water and column temps. The unit is going to Swede's distillery control box. I think it's a 24v, 3-wire signal. This is a replacement unit - the original came with the still and has a sticker for model #, mfc, etc but doesn't actually have a model # or mfc or anything else.. Thanks in advance. I can add pictures of the unit later if needed.

  14. Thanks for the replies everybody! I appreciate the plugs but unfortunately I don't need 55 gallon drums - I need 1000-1500 gallon conicals for storing/blending/proofing spirits. I'd like to ask a few more questions from above & this weekend's thrilling investigation of codes... - I think the MAQ is 120 but can be doubled to 240 gallons when an automatic sprinkler system is present. This is for non UL tanks right? UL tanks far exceed 240 gallon and are commonly held inside a building too. - a single wall tank is acceptable if you have a drainage containment tank for the facility and automatic fire suppression? The quotes for double walled tanks are literally double and I don't want to spend 60k on tanks.. - are XP vacuum vents used in conjunction with atmospheric venting or separate? Also, are these typically supplied by the tank mfc or purchased separately? Cheers
  15. Hi all, We are looking to upgrade our spirit tanks and I can't tell if we need double walled tanks, exterior vents, etc. I'm referencing NFPA 30 and UL-142. We're talking about blending tanks and holding tanks in the 1000-1500 gallon range. Is potable ethanol exempt from these? Also, do you have recommendations for suppliers of these tanks if that is what I need? Cheers
  16. ^ that's exactly why my position has changed. I don't like that they've done it - it seems against the "spirit" or the regs (pun intended) but they've apparently been in compliance so it's whatever. Dunbar knows the regs better than I do and I've learned a lot about the regulations, the industry, and life over the past several years [enough to know that there is a never ending stream of caveats]. At the time, I was definitely an amateur.
  17. lol well, i wouldn't say i necessarily agree with myself from so long ago but.. I think what I was saying is that vodka being defined as "neutral spirits distilled or treated after distillation with charcoal or other materials so as to be without distinctive character, aroma, taste or color" can't be barrel aged with flavor and color and still be vodka. As for Jeffersons Ocean Age they are literally making a boat a part of the aging process. Aging, I would assume, has to be done in a DSP which - “Subpart F – Location and Use (of distilleries) § 19.131 Restrictions as to locations. Distilled spirits plants shall not be located in any dwelling house, or in any shed, yard, or enclosure connected with any dwelling house, or on board any vessel or boat, or on premis.....". but maybe you're allowed to age on a boat for some reason? IDK, just doesn't really sit right with me. I wouldn't say it's illegal, just stuff that I thought was wrong then. but it's 4 years later so I'm pretty well over it. Cheers
  18. Our ambient temp is 80+F out here and we cool to 80-82F for a agricole-style rum (fresh juice). If the fermenter is jacketed for cooling, it probably has enough insulation to keep the heat from an active ferment. The chiller will not heat the glycol but the piping could be controlled in the same manner and heated with a separate heat source like a solar array or water heater. "reverse heatEx" does sound cooler btw lol

  20. Affordable is relative. We went with the one our Anton Paar rep suggested - it was around $3-4k (purchased a few years ago). Any water bath that can fit your flask will work. You won't need anything fancy as long as the liquid in the bath covers the liquid in your flask and the temperature is accurate. Our brand is PolyScience but it's definitely overkill for our purposes.
  21. We use a flojet when pumping out of barrels. keep the hose off the bottom and you should be alright. (agreeing with PeteB). Alternatively, roll the barrel and dump it through screens (we do this with a funnel that has a mesh screen in it)
  22. Buzick Lumber in Bardstown KY builds quite a few of the large rickhouses around there. You've probably seen their ads in ADI and Distilling magazines. I built the first round of racks like that for us out here out of 4x6 and 4x4 douglas fir ( i wanted oak but it's hard to find in HI). Ended up switching to double barrel racks when we moved from 15 gallon barrels to 53 gallon because we couldn't use a block n tackle hoist anymore. Anyway, your racks look good and I love the Genie. Do you recommend the genie for barrels?
