  5. We had a surplus of malted corn sitting around and tried using it as the corn component in our grain bill to use it up. I just started stripping it today and am worried about how it will turn out. My strip tastes like corn husk. I'm guessing this is not something that will be removed in the head cuts, and have no idea how this flavor will age. Is this a good thing in disguise or have we made a terrible mistake?

  8. Many people and books talk about bottle shock, and how 3 months in the bottle greatly improve the spirit as it gets its initial oxidation, rest, and mingling of chemical components. The ADI book Distiller's Guide to Rum suggest the greater part of 3 months for storage after bottling before selling, and we have definitely noticed a marked improvement in our spirits from the day they went in the bottle till a few months later. With that being said, does anyone have experience in the time of vatting making a real improvement? Example. If we have to release a product in 3 months, will it be more beneficial to blend and vat the barrels for 3 months, then bottle and sell immediately; blend and vat for 1 month then bottle and allow rest; or allow equal vat and bottle times? Eg. Does the best mellowing happen from blending in the steel vat or resting in a bottle? Thanks for the help!
  9. Has anyone added juice or brewed coffee into their spirit as a natural flavoring? We are tossing some ideas to collaborate with local craft people, but my biggest concern is the oxidation of the additives. Does the alcohol basically suspend and preserve the juice/coffee/oil,sweet substance, or have you found there is quick degradation of quality?

  14. Hi, we have a pot still and are distilling on the grain and we've noticed a silver metallic build-up that will occur after just one run of our 250 gal still. Does anyone have any experience with this? Otherwise the quality of the spirit seems good, but because our still is 1/2 the size of our fermenters it would be ideal if we could prevent this so we don't have to break down and clean between every stripping run. Other spirits (apple brandy and gin) have been run through with no similar problems. I've attached a picture of the lyne arm after a single run. We suspect there may have been some carry over, but we know there was none in the second run and we had the same problem, despite a thorough cleaning of the still. Thanks, Eli

Greetings All We have purchased a stave mill about 1 hour from out cooperage, and are now producing new charred 53 gal oak barrels from MN oak Additionally we have recently tripled our output over the past year and now have many barrels of every size in stock- 5/10/15/30/53 gallon, and intend to have stock going forward Currently we are making our 1st production run of 53's, and will have about 100 extra ready to ship by the end of next week The 53's are $275/ea, and fit 6 to a pallet.   19. We are making corn whiskey – thanks to all of you who helped us get through our mashing and fermentation issues. I would seriously be screwed if it wasn’t for these forums helping us trouble shoot. By the way, it tastes great!!!!! We ran our 80% corn 20% barley wash @ 5% ABV through our column still with two plates. Run started great, we were able to run it @ 160 proof for most of the run – my question comes in as the run started tapering off from 160 proof and down. Do you typically run it at the same temp and just let the ABV decrease and try to keep the flow steady, or would you be willing to run slower and keep it at a higher ABV? My thought process was that as we will be diluting this to 40-50% ABV, we might as well keep running it down and make cuts as the flavor dictates, but I could also see slowing the run to keep a higher proof distillate. Also, I couldn’t find many column still operation conversations, so maybe this is a good place to have it?
  20. Hello there. What we have here is a Figgins Reciprocating Still. 2000 Liter system capable of making 0.5 L of 160 proof Alcohol per minute. A lot of modifications from the original state. We added custom Stainless Steel heating elements. We also added mixers to keep the wort moving during heating up. I added two extra plates on top to make 190 proof for Vodka. The control panel is an excellent piece of hardware and essential for an electrical still like this. The still operates on 208v 3 phase. You'll need at least a 150 Amp supply. If you only have 100 amps ( like I did in the old days ) you can operate the still on one kettle. I have won two awards for the Single Malt made in this still. One from ADI and one from SIS. Its an excellent still and a decent size to get your DSP and distillery going. You get all you see in the pictures. All you will need to work this still is the power / water / and air for the mixers ( if your mash has suspended grain in it ). If your rum man...you probably wont need the mixers. We've switch to steam, and need the space for a bottling machine. It's a great still. It comes with all the stainless brackets etc..you see in the photos. $35,000. Located in Charlotte NC>
