  5. I'm running into a lot of difficulty recently with my distillation/ fermentation. The symptoms are early onset of feints/ tails. I have tried increasing reflux in the still to continue the hearts cut but it isn't working. I have tried less reflux too. Fermentation appears to be good. Grain bill - 100% barley malt Starting gravity 1.061 Final gravity 0.997. Estimated ABV 8.38%. Final PH 4.19 Distillation Still - 250 litre pot with 3 plated column with dephlegmator. Heads and foreshots are compressed at the begining of the run - 100% reflux for 30 minutes and heads collected slowly afterwards. Cut is determined by taste a smell. Hearts- relfux is reduced and heating of pot is increased. Cut is determined by taste and smell. The average abv i was collecting before this was 81% ABV. I can achieve above 81% ABV initially but the abv drops fairly suddenly when about 25% of the expected hearts cut is obtained. The product becomes feinty after this point. I have checked the still for leaks but all the gaskets look fine. Any advice?

  7. Morning (here in the UK anyway) Last night we ran a 50% 40 litre gns/water charge through our 50 litre stilldragon pot still. Previous tests have only been in the region of 1 - 5 litres. We scaled our botanical content up proportionally to the volume of alcohol/water. This was left for 24 hours. The collected spirit on boiling had a shocking sulpherous nose but the flavour was along the lines of what we expected. Intermittent cutting of the new make spirit revealed considerable louching throughout the run, which to me suggests the ratio of botanicals to alcohol is way to high. We're going to cut the nms with varying proportions of alcohol/water to see if we can determine the correct ratio. Our thinking is that if we add a volume of alcohol equal to that in the new make spirit and then cut to bottle strength...and loucing disappears, are we correct in assuming that our botanical level should be halved. Is there a better way of doing this? What about the sulpherous aroma. Is this botanicals stewing? All feedback appreciated.

  10. Hello everyone, Finally getting to do some test batches for 100% barely mash. Mashing and fermentation is going very well. When I am getting to the stripping run however, I believe I am experiencing some issues with scorching the grain (on the grain distilling). I even finished the spirit and the taste was very good except for a off burnt smell that I believe is contributed by scorching during the stripping run. 1. Is it possible that even though the grain isn't burning, it will darken and 'roast' during distillation, possibly causing off smell? 2. at what volume of distillation would you recommend agitation? Currently I am distilling with a 26gallon mile high flute with blichman burner. System is working great other than this smell I cant decide if I need to splurge on an agitator!!! Doing appx 20 gallon text batches. any help appreciated Thanks

  16. Hello! We've got a 250gal charge (300gal total) still kettle for sale. We ordered it to use for stripping runs and have decided to go a different route. Its got an 8" ferrule with 4 2" connections on the top for a pressure valve, agitator, sight glass, and a light if needed. Built in light for the manway, 2 2" port on the side for a volume glass, (currently fitted with 2 sight glasses) and a 2" drain. 440k btu natural gas jet burner is included.   19. Good Morning Everyone, Wanted to introduce myself as the new distiller for La Colombe (meaning the dove) Torrefaction/Distillery. We currently have one product which has undergone formulation, refinement and launch over the past 2-3 years. As of May 17th, we have recently been accepted by the Philadelphia Liquor Control Board into 100 stores across the Philadelphia area. Different Drum Rum is, as the bottle notes, a "rum for the bourbon drinker". We take cane sugar and supreme molasses to begin our mash fermentation. Going through both a simple and then fractional distillation, the mash is brought to 89% ABV which is used as our base. This is then diluted to either 60% for barrel aging or 40% for our coffee infusion. The aged rum sits for a minimum 6-9 month period before making a final blend that is mixed with the coffee infused portion. As La Colombe is first and foremost a coffee roasting company, this rum wasn't going to satisfy for false flavorings. Using a Panama varietal of coffee, termed "Geisha", which is sourced from Hacienda La Esmerelda. Having one many coffee competitions, we selected it as the ideal coffee through several organoleptic evaluations in our rum. After roasting the green beans, we immediately grind the coffee and put it under pressure with our 40% rum. What we get is a profusely aromatic liquor with caramel, floral, nutty tones that round out the oak characteristics from the barrel aged rum. Enjoyed neat, on the rocks, or my favorite - an old fashioned with crushed ice - this is indeed a drink to sit and appreciate slowly. In addition to this staple product, we're looking to expand into several different avenues moving forward. Several projects are ongoing in R&D, but we hope to have some new products within the year to continue our lineup.   24. I'm located in NC, recently graduated college, and eventually want to move towards opening my own distillery. I've developed one or two formulas for spirits through significant experimentation while developing a brand that I believe will serve a specific niche. However, I do lack significant capital and distilling experience. For this reason I'm aiming to begin by contracting with a local distillery and hope to be as hands on as possible to gain experience (I do have enough savings for this, including a limited marketing budget). I have created an LLC and submitted my application for a wholesaler's basic permit with the TTB. I'm familiar with most contracting agreements with distilleries where the DSP holds the formula and COLA for a firm, and a firm grants permission for a DSP to use it's name, logos, trademarks, etc. for production purposes, the wholesaler then buys the bottles from the DSP, then sells to . My specific questions: 1. Can my company hold the formula and COLA? The TTB asks for the basic permit # in the submissions for formula and COLA, and I understand that the DSP generally holds this. I'd like to hold formula/COLA as the formula does have something (I consider to be ) unique I'd rather not share, for ease in case I need to change which DSP I contract out to, and for ease when we eventually build our own DSP. As I understand a DSP almost always submits and holds formula/COLA, but I want to know if a wholesaler can do this. 2. How hands on can I be in producing the product? I have some familiarity with tied house laws and understand the three tier system. As a wholesaler contracting to a DSP, can I physically be in the DSP producing/bottling the product? I would buy the product from the DSP as a wholesaler (or brokerage in NC), which would then be sold to the NC ABC system. 3. What are the laws (or where can I be pointed) regarding a wholesaler storing product? I understand bonded warehouses for a DSP or even an importer, however, I can't seem to find much information about storing bottled spirits after they have left the DSP and all taxes have been paid. Just to bring this all together so everyone knows how everything will flow, this is what I would like to do: I will get my TTB wholesaler basic permit, after basic obtained apply for NC brokerage permit, after basic obtained submit and get formula approval, after formula obtained submit and get COLA, contract with local DSP and order supplies, assist DSP in production and bottling of first order, I buy bottles from the DSP, fed excise taxes are paid and bottles are removed from bond, bottles are stored at a different location not under bond, bottles are sold to the NC ABC system (go to central warehouse and then to retail locations). Of course there is a lot of hard work and marketing going on, but that's just what I'm envisioning as my legal procedure. I apologize for any of my ignorance regarding this topic, thank you for any and all help!
