Summary: Sourland Mountain Spirits is looking for a candidate with some experience to help with our sales and delivery. We are a start-up craft distillery located in Hopewell, NJ. We are committed to local ingredients and we are proud to say that we are “New Jersey’s First Farm Distillery Since Prohibition.” Several years of sales experience is required.   4. Moved onto the details of our bottling line in the final stages of setting up. Through put is hopefully going to be in the region of 200 litres per week. Initially we're going to run an enolmatic single filler, drawing product from SS blending tanks via a single cartridge filter. Our water is RO treated. Interested to know what peoples views on the following. 1) polypropylene or stainless - what's the typical lifespan of both? 2) filter size (microns) - looking for a balance of polished spirit without knocking out flavour/aroma? 3) Has anyone used the enolmatic single filler standard version not (upspecced with SS parts option). is it still working? Thanks folks, feedback on your experience is as always, greatly appreciated.
  5. Has anyone added juice or brewed coffee into their spirit as a natural flavoring? We are tossing some ideas to collaborate with local craft people, but my biggest concern is the oxidation of the additives. Does the alcohol basically suspend and preserve the juice/coffee/oil,sweet substance, or have you found there is quick degradation of quality?
  6. Hello, I'm a newbie at spirits filtration and have a few questions regarding filtration in general and also what's the best method to filter a cloudy gin in particular. Will a plate-and-frame filter out too much aroma/flavor? I've heard some use the Noryl plastic plates, but others recommend only using stainless steel plates to filter. Stainless steel is much more expensive and I'm wondering if it's necessary? Is a cartridge filter better or does it accomplish different goals than a plate-and-frame? Finally, what filter pad and/or cartridge filter manufacturers and types do you recommend? Thanks for the help!

  11. Good day to all, I would like to inform the ADI community that I am seeking employment as an Assistant Distiller and willing to relocate from Northern California. Being a part of ADI is a community of craft distillers who stay in contact and network, so I thought I'd write this message to notify and get the word out. I want to learn everything I can and gain as much experience because I am a passionate individual in this field. My name is Raphaël Germain-Robin and I have worked as an apprentice assistant distiller at Stillwater Spirits through the American Distilling Institute (ADI) where I had received an internship through Bill Owens the President of ADI. Following that internship, I had my article published in the ADI newsletter. For 3 years I also worked part time as a cellar worker at Alambic, Inc. (Germain-Robin Brandy). I am looking to learn everything I can in all aspects of production from, whiskey, bourbon, rum, gin, brandy's, cognac, liquors, etc. Since 2015, I have been apprenticing with my father, Master Distiller and International Consultant Hubert Germain-Robin, absorbing information and learning from his knowledge of distilled spirits and the aging process, If you or know anybody who is perhaps looking for an Assistant Distiller please pass this message along and I will gladly email you my Resume for more information.   12. TTB guidelines state that Gin's predominant flavor must come from juniper. This seems extremely open-ended. If I were to make basically an herbal liquor with juniper only making up a minuscule component of the mash/basket could it still be legally called a gin?

  17. Has anyone had any experience with alternative fixatives. We are playing around with an American Aromatic Gin and I was hoping to use something other than the traditional fixatives (Angelica and Orris) to secure flavor. Anyone have any suggestions of botanicals they have tried?

  20. Hi, As the title suggests i am in the process of making a cost effective house gin for the bar and nightclub market. I have my recipe all figured out and I am happy with the taste, but I have run into a few problems with the maceration and distilling technique. The first being the cloudiness issue. I know discarding the heads is a way to reduce the cloudiness, but i have found to get a truly clear gin I have to discard a lot. Is it possible to keep all of the heads and just filter the oil and cloudiness out? If so what size filter would accomplish this without any loss in taste? Also, as I would like to save money and reduce waste, what temperature can I collect to without compromising the taste? So far I have been collecting to 90C but I feel I could go higher. Thanks Guys

  22. For those out west: Is anyone harvesting their own Juniper berries? There seems to be subtle differences between j.communis (traditional) and j.occidentalis (western) and I've heard of a few places experimenting with our western varietal. However, I'm not sure if there has been a significant change in the final product. This also seems to leave a lot of room for the craft movement to identify a new category in addition to "New American" and "New Western." Thoughts? Experience? Cheers!

  24. I'm reading often that botanicals should be at 20-35 grams/liter depending on the recipe. Is this liters of spirit to be collected or total liters of liquid in the charged still? of It seems that there are some varying opinions on the topic. Additionally what are the pros and cons to charging the still at a lower proof (60-80) or at a higher proof (80-120)? Thanks!
