  1. Does anyone have experience making rye whiskey? If so, can you describe some of the major differences in mash bill or procedure that made a successful rye? After two extremely low-yield batches, I am scouring for resources on rye whiskey. I have not had much luck finding detailed information. If you know of any good books, journals, or websites on rye whiskey (particularly the mash) please let me know.

    Mash pH

    Seeking help with my mash profile. After heating and holding the mash (all wheat) and adding the alpha enzymes my pH is above 6.2. I know this is the high end for alpha but the enzymes seemed to work well (no starch). I added some citric acid to get the pH down but after adding 300g the pH had only dropped to 5.6 - still above the beta-amylase sweet spot. I am using carbon filtered city water - any ideas of how to get the mash pH down to where the betas would be happy? Thanks.

  8. On very important piece of equipment is a quality grain mill. This is a perfect mill for any operation. It is a CS Bell #2 with a new 7hp motor. 208/230 single phase. I have all screens from course to powder. The blower will move the grind to a separate location, like milling outside and dumping directly into the mash tun. Less work, more efficient. Works perfect and will last many, many years, the bearings are greaseable and all hammers are in place. $1200, FOB
  9. We are going to be running jacketed 250 and 150 gallon stills. In lieu of a chiller, does anyone have experience crash cooling with ice? Any reason this wouldn’t be ideal? We reduce our initial water in the mash by the amount of ice we’ll add. Once we’ve added malt or amylase and thinned the mash, adding ice to get us to pitching temp as quickly as possible. Thoughts?
  10. We were talked into a plate press to separate beer liquid from mash solids. Has anyone used this method?. We are not having any positive results. The plate filters clog up about 1/2 way through the plate stack, so that only some of the plate cavities are dry pressed, the others are a floury mess. I have heard that several breweries are using this method but the ones I have talked to are pressing/filtering pre fermentation. They also say that they grind their flour quit fine which makes me wonder why our press is clogging up?. We are coarse grinding. The system was designed using samples of our mash and process information. JOHN BROOKS and MICRONICS have given us very little assistance since the Plate Press was dropped off (3 months late). John Brooks had a pump technician drop by for a day to review the AODD pump which is working correctly but she had no knowledge of Plate Press operation. We installed a HUGE 7.5 HP compressor to maximize our air needs. Our plates are always stacked 1-3,1-3, we have tried short stacking, slower-faster feed rates on the AODD pump and AIR COMPRESSOR, premixing the mash slurry so pumping is consistant. Any ideas?   11. Hi there, We are making whisky with a grain-in process. The mash is pumped from the mash tun to the fermenter with a centrifugal pump and stays there without agitation. After a week the grain is settled at the bottom and the husk is floating dry at the top. It is a hell of a job to pump this to the still after it is settled. I am thinking about using a lobe pump but I am not sure this will work with the solid at the bottom. The other solution would be to add an agitator to keep the mash homogeneity. Does anyone ever had this problem with a grain-in process? Did you try a lobe pump or other solution? Thanks!
  12. I have a budget 70-150k I want a copper still is a must. Fermenters stainless steel. And want to be able to produce large amounts if needed with this budget please recomend all products you suggest and company's that you would stay away from.

I was reading the Artisan Spirit magazine the other day and the article written by Wilderness Trail Distillery on cranking out the maximum number of barrels on your equipment got me thinking about their mashing technique. Is there a reason to add smaller grains (rye, wheat) after gelatinizing the corn, instead of adding it at the same time. The whole article is on minimizing the cook time and overall efficiency, and I don't know what the downside of adding rye and wheat at the same temperature step as the corn would be...thoughts? Some off flavor I don't know about? I have done a few mashes with the corn and wheat/rye added at the same time and brought to 190; I have never really seen any problem with this but perhaps if I dropped temp to 170 to add rye/wheat the flavor would change.
  14. Does anyone have a 400 gallon mash tun or similar and is able to tell me what the weight is while empty? I know manufacturers will provide specs, but I just need a ballpark right now.

  16. We are a distillery that is going to be opening in the next couple months in North Carolina. I wanted to ask around and get some good ideas of what other people in the industry are doing with their used mash. I have a pretty good idea, but to make it better id love to hear some other techniques that people use. it will be 100% corn mash. Thanks in advance!

  21. I am selling a used "Shell and tube condenser" instant hot water heater manufactured by Jet-Vac. This hot water heater is steam powered off your boiler and allows you to make unlimited amounts of hot water up to 211 degrees at up 30GPM. It is big, about 6~7 feet tall and all stainless. Built in 1994 the nameplate says it is rated to 30 GPM. It was included with my boiler when I bought it (15hp Fulton) but I don't need it. I've seen it in operation but have not used it myself. The outside insulation jacket is cracked and split in a couple of places from moving it around. Included are the NTP flanges to hook into a system as well as a custom built stand. In the pic you can see me standing next to the heater (the heater is about 6 ft tall) and the custom made steel stand is next to it. Its rated up to 75psi and the original owner had it running at 60psi, lower pressures will yield lower hot water flow rates. A pressure regulator, relief valve and tempering valve are NOT included. You must use a tempering/mixing valve after the heater to get the exact water temp you need. See attached pics for more info. Asking $2000 as I just don't need it.   22. Hello guys and girls, I was wondering how you seperate your wheat grains after mashing from your wort? We tried a sieve plate but it kept cloging up and was dead slow. Tried replacing half the malted wheat with malted barley but that wasn't giving us the flavour profile we were looking for. Tried rice hulls but they are quiet expensive over here. Any good ideas exept a liquid solid seperator? Cheers!

  24. My systems are all electric, so separation is a must. At the moment, I have a way to separate via a press, but the press requires a hiccup in the process flow while it is filled/pressed/emptied. I would love to have a Russell Finex machine, but 20k (as I hear they cost) is not a doable number right now. I know Dehner started a thread about a version of this that he is designing, but does anyone know of a secondary market for equipment like this? Are there any other manufacturers making something like this for a lower price? Alternatively, for those unable to distill on grain, how are you separating solids from your wash? Any input appreciated. ( )
  25. Hi all! We are thrilled to be working with a local farmer who is feeding our spent grains to her pigs. We have a few questions hopefully people with experience can answer. 1. How long is the mash safe to eat after delivering to the farm? She only has two pigs so the mash seems to be spoiling before they eat it all. 2. Anyone have a resource for nutritional content of a basic grain to bottle mash? 3. One of the pigs is pregnant and the farmer is nervous about giving her any. Anyone dealt with this?
