Hi All, I'm finishing some whiskey (Straight Bourbon, 21% Rye) in a used red wine barrel. Periodic assessments indicate a detectable, albeit slight, sulfide pickup. I've casually treated the tasting sample with a small piece of copper yielding some good results. So, to do this on a production scale for the finished product, I'm investigating a standardized treatment via copper sulfate. Questions: Has anyone ever attempted trials with Copper Sulfate additions to whiskey for this purpose (akin to winemaking practices)? Would the copper sulfate addition take the product out of compliance? I can find the regs for allowable materials in winemaking (copper sulfate included). I haven't found something similar for spirits (other than allowable color and flavor materials) per 27CFR 5.143(c). If I opt for the physical contact with copper metal route, does anyone have a guideline for time & surface area per unit volume? Regardless, I'll be tooling around with some bench trials. If you buy spirits in bulk, and then bottle them in your facility, what equipment is required to get a DSP license? Obviously you don't need a still to finish the product, but would you have to get one anyways in order to comply with the TTB?

Many seem to be in it only for themselves and in the end only prove to be roadblocks that are a drag on the industry. They are not here to promote the craft distillery industry for the greater good; they are involved only for their own personal wellbeing. Our group of industry experts brings years of dedicated service, specialized products, and a true commitment to the craft beverage industry directly to you. One of the many benefits of this group is that we save you one of your most precious and valuable resources, time! I apologize if this has been covered but I was reviewing daily records and found one that I missed and haven't heard about before. §19.603 Liquor bottle records.A proprietor must maintain records of the receipt, use, and disposition of liquor bottles. (26 U.S.C. 5207) Does this mean that we should be keeping for record daily's on our inventory of empty bottles? Or did I misunderstand that?

The TTB may combine the 3 monthly reports into a single report (two if you also produce industrial alcohol) This would mean a significant reduction in paperwork and staff time for small distilleries. It is important that we give them feedback supporting this change and comment on the proposed new form. It could use some fine tuning from the end users. They are accepting comments through Feb 3rd. The two proposed forms would be titled, TTB F 5110.77, Distilled Spirits Plant Operations Report—Beverage (Nonindustrial) Alcohol and TTB F 5110.78, Distilled Spirits Plant Operations Report— Industrial Alcohol. The proposed new forms would not require a DSP to report the level of detailed activity in the production, storage, and processing accounts that the current forms require. A DSP would be required to report the proof gallons of spirits in inventory at the plant as either produced, received, or removed during the reporting period. Hello, We are brand new distillery recently licensed by the FED and working on our state license. I expect to have it done by mid-January and will then be off and running. Our operation is starting off very small so I am interested in simple solutions when they can be obtained (but I have not found one yet for this exercise) One of the major hurdles it seems everyone faces is taking the time to track daily activities and then complete the monthly and quarterly reports. We use Quickbooks for our accounting software but I am interested in what others are doing to comply with the regulations on monthly reports as well as daily logs. It seems many are using QB Manufacturing or POS and there are others that use the online distillingsolutions product. Any comments on other solutions and / or how to integrate this into your daily logs. Are you keeping paper logs and then re-entering the information into the computer on a regular basis?
