  1. We have been in business since 2018 as a New York Farm Distillery. Since 2020, we have increased our capacity beyond what we will need for some time, and thought it might be cost effective to join with another distillery or partner with one to help them get started or expand and use some of our excess capacity. This is a great way to increase capacity without the cost of a huge expansion project or a great way to get spirits made while going through the licensing process.   2. I am offering a hands on whiskey distilling class at the The Schenectady Distilling Company. It is a 3 day class scheduled for January 16, January 23, and January 30. Each day will focus on a specific part of the distilling process. Day one Mashing and fermentation, Day 2 stripping run, and Day 3 Finishing run. In between the time spent on production we will go over all the other systems in the distillery as well as other topics including Licensing, labeling, bottling, TTB reporting, NYS reporting, safety, aging, etc. Presently, I'm an instructor for SUNY SCCC for Craft Spirit Production I & II and the distillery uses an 800 gallon Mash Tun, 800 gallon stripping still, 800 gallon fermentors and a 300 gallon column still. Our New York State Farm Distillery facility has excess production capacity and we would be more than willing to help another distillery or a future distillery produce spirits at a reasonable cost. We have an 800 gallon mash tun and a 300 gallon column whiskey still and can produce somewhere around 80-100 proof gallons of spirits per batch. One or two batches can really kick start your production process. We can also age the spirits on site.   5. Aloha! I just recently got my membership in ADI and am in the process of opening a Farm-Distillery on the Big Island of Hawaii. I have a 20 acre farm between the Volcanoes National Park and Hilo where I am growing Kayinja Bananas and several vareities of figs to produce a local brandy under a wood fired still. We are planning to open around May 2019, which is when my banana fruit are likely to mature. With the help of the University of Hawaii and the Hawaiian Agriculture Research Center, we're cloning 1000 Kayinjas that are native to Central and Eastern Africa used to produce locally banana wines and in some cases distilled into a wonderful spirit. I've also planted numerous fig trees and will be taking on bee hives to produce even more variations of a local farm to table brandy. This will be a true farm distillery, with the inputs entirely from my farm. I trained at Distillique in South Africa a few years ago and it really helped set me this plan in motion. While not as well known in the US, they are the only school I found that specializes in fruit based spirits and I returned for their brandy class. I recently attended Duncan Holiday's distillation course in Vermont, which gave me any useful tweaks to my business plan after meeting with numerous startups and learning their experience. I look forward to attending ADI's 2018 conference in Portland and hoping to eventually be part of a Hawaiian Guild of Distillers. Mahalo!
  6. HEAD DISTILLER Head Distiller: Head Distiller for new craft distillery located on 60-acre coastal farm in historic seaside resort of Cape May, New Jersey. Head Distiller oversees and manages day-to-day production activities and ensures safe, clean, efficient distillery operations, from raw ingredient procurement and milling through to bottling/barreling of finished spirits. Responsible for producing spirits on high-quality Vendome 750 gal stripping, 250 gal finishing, 25’ vodka column, and Custom Metal Craft 1,500 gal mash vessel and 1,500 gal fermenters, largely from ingredients grown on our farm or from other farmland that we control in the State of New Jersey. Requirements Ability to start work immediately Over 21 years of age with valid driver’s license Detail-oriented, highly organized, self-starter with demonstrated ability to exercise accountability and responsibility Proven ability to work with little to no supervision and be able to strictly adhere to directions/procedures Team player who contributes to camaraderie and pleasant working environment Problem solver with positive “can do” attitude Understands importance of SAFETY, CLEANLINESS, production efficiency, management of others, federal/state reporting requirements, inventory accuracy/projections, and packaging/barreling/aging processes Understanding of and ability to implement/oversee standard operating and safety policies/procedures Broad knowledge of craft spirits, cocktails and beer Meaningful experience as Head, Lead, Shift Distiller/ Brewer, or similar experience in the distilling, brewing, and related science fields (preference given to candidates with distillery experience) Fermentation and mashing experience with an understanding of yeast and starch conversion to alcohol Understanding of the importance of accurate record-keeping, including distillation records, quality control, lab records, instrumentation records, TTB and ABC reporting, and inventory control Experience with machinery including pumps, boilers, air compressors and chillers Basic plumbing and electrical skills/knowledge a big plus Willingness to work some long hours, including weekends and evenings, if necessary Ability to climb, kneel, stoop, and lift/move 50 lb frequently, and extended periods of standing/walking Ability to work in outdoor weather conditions Ability to drive a fork-lift and work a pallet jack This position offers the possibility of increased responsibilities in the future as the company grows.
