  7. Distiller: Blackwater Distillery Blackwater Distillery has already made a name for itself as a producer of innovate and award-winning gins. Now we are moving to a new home and starting the production of Irish Whisky and that’s where you come in. The role Blackwater Distillery is seeking a suitably qualified distiller as we expand into the production of Irish whisky. Our new micro-distillery is due to open in September so the post is available with immediate effect. Working with our Creative Director Peter Mulryan, this position is focused solely on the production of Irish whiskey both malt and Irish Pot Still. We are not just looking to produce one or two types of spirit, but rather a whole range of pot still products. We therefore need someone with a huge amount of enthusiasm and energy, but with a real grasp of the brewing process as we will use a lot lesser-used grains. The position is based in Ballyduff, West Waterford (near Lismore); so it’s off the beaten path. It is critical that applicants have all appropriate qualifications and is fully expert in all aspects of the brewing and distilling process, stock control, quality assurance and health and safety issues. Job Description Distiller Blackwater Distillery This is a senior position and involves a wide-range of responsibilities including brewing, distilling, holiday cover for gin production, quality control, product testing and sourcing raw materials. They will also be required to interact with trade, press, and members of the public both in the facility and at trade shows. Specializing in Rum, Vodka and Liquors, we operate a 1000 gallon washhouse and fermenter batch size with wash and spirit distillations running every day Monday through Saturday. POSITION We are currently looking for someone to fill a position that will work on all facets of our spirits production from wash production and distilling operations to warehousing and packaging in addition to palate development. Chattanooga Whiskey Company is in the process of hiring a DISTILLER/MAINTENANCE SPECIALIST for our new craft production facility in downtown Chattanooga, TN - Outside Magazine’s two-time “BEST TOWN EVER” winner. This facility has been operating since late March of 2017 and has already put away over 600 barrels of whiskey to date. The Vendome distilling system is comprised of a 12 inch, 30 foot column still with a doubler, beer well, 3000 gallon cooker and 4 x 3000 gallon fermenters. Our distilling team lives by the phrase “Rules are Good, Change Them”, so your attitude and training should reflect a respect for tradition but also an openness and willingness to innovate and continuously improve. Every day we try to do better than the last – which includes everything from the way you organize your workspace to how you clean a tank, to the way you approach building or executing a recipe. We want to build the best bourbon and whiskey possible, and our people (and their attitudes) are the most important ingredient to that recipe. We currently offer 1816 – an 8 year old, award winning, world-class, traditional bourbon blended and bottled by yours truly. In August 2017 we released the first batch of our single batch Experimental Series from our 2.5 year-old Experimental facility and tasting room on Market St. Some of those recipes have already "graduated" up to our larger facility on Riverfront Parkway. Distiller responsibilities include all aspects of grain to glass production of whiskey: • Receipt of raw materials • Milling, mashing and fermentation management • Transferring of mash, fermentations, high wines, etc. • Distillation on continuous column still • Barrel filling, dumping, proofing • Bottling, packaging and shipping/receiving • Guiding occasional tours of the distillery • Inventory management and materials ordering • Single barrel micro distillery activities and shifts Maintenance-focused responsibilities include but not limited to: • Developing a maintenance schedule on crucial equipment as well as maintaining clean and well-stocked maintenance tools and parts storage. • Performing facility breakdown and preventative maintenance tasks for all electrical, plumbing and mechanical systems related to the distilling operation as well as those related to distillery functionality. Being a part of ADI is a community of craft distillers who stay in contact and network, so I thought I'd write this message to notify and get the word out. I want to learn everything I can and gain as much experience because I am a passionate individual in this field. My name is Raphaël Germain-Robin and I have worked as an apprentice assistant distiller at Stillwater Spirits through the American Distilling Institute (ADI) where I had received an internship through Bill Owens the President of ADI. Following that internship, I had my article published in the ADI newsletter. For 3 years I also worked part time as a cellar worker at Alambic, Inc. (Germain-Robin Brandy).   17. Bently Heritage (previously Nevada Heritage) is looking for a full-time Master Distiller. This is an exciting opportunity to join an innovative project from the ground up as we launch one of the first distilleries in the state of Nevada. OUR STORY: NEVADA HERITAGE, our upcoming craft distillery, will live up to its name by preserving the great traditions and heritage of Nevada and the Bently name, while stepping boldly into the future. Like the distilleries of a bygone era, we’ll use only local ingredients: Winter Rye, wheat, barley, corn and other grains will be sustainably and naturally grown by our sister company, Bently Ranch. The ranch — just like Old Minden — operates in the cowboy tradition but with a keen eye on sustainability, the latest technologies, and the future. The same care and attention that spirit making requires will be poured into the renovation of the Minden Flour Milling Company Building. Earning a LEED Platinum certification isn’t an easy job for a historic building, but we have never shied away from a challenge. We boldly let the world know we had every intention of turning one of San Francisco’s most beautiful properties, the then old Federal Reserve Bank building into a LEED Silver beacon for the future. We delivered and then some. To say we are repurposing this incredible historic building is not accurate. We are restoring a grain processing facility into a grain processing facility. Only this use is going to be a lot more fun. Our goal isn’t just to produce artisanal-quality spirits, but to set a new standard for sustainable production; innovating an industry while revitalizing the craft distilling tradition. Nevada Heritage is the impetus of a farm-to-bar revolution, and will be the first estate spirit craft distillery. Farm-to-bar we are growing, producing, and bottling everything in-house under our watchful eyes to ensure only the very best distilled spirits in the world. We are blessed with the cleanest, most pure water in the country. Minden Water Works has never had to treat their water. Due to the naturally occuring aquifer and filtration process, Minden is provided with water so pure it’s better than treated water right out of the ground. In fact, the original well aptly called Well Number One will have a dedicated line running straight to our distillery. We have a beautiful building that truly is a work of art. Stay tuned for updates on the progress of Nevada Heritage. ------------------------------------------------------------------------------------------------------------------------------------------------------- MASTER DISTILLER Summary: The Minden Flour Milling Company building, a National Registered Historic Place, will be converted into a craft distillery named Nevada Heritage. The new distillery will be one of the first operating in the state of Nevada since Assembly Bill 153 was passed earlier this year, allowing local distilleries to operate. This puts Nevada Heritage in notable company with fellow Silver State artisans as well as landing Minden at the forefront of a burgeoning new industry. Nevada Heritage will live up to its name by reintroducing the best traditions of the Old West, while embracing New West values such as sustainability and premium quality. The Master Distiller will be responsible for developing the Nevada Heritage collection, planning and executing distillation operations, overseeing production, and managing inventory. With support from Marketing and Sales teams, the Master Distiller will also showcase and advertise our spirits to raise brand awareness and build relationships with local and national media sources, all while complying with relevant federal, state and local regulations. Responsibilities include: • The selection of spirits for the purpose of blending. • Analysis of spirits and blends as per quality norms and standards. • Implementation and overseeing quality control measures for wet goods. • Packaging quality control. • Maintain appropriate records (quality control, excise etc.) • Set standards for raw material and product quality & auditing regularly to maintain quality levels. • Day to day activity monitoring of all testing labs, production sites & finished goods inventories. Requirements: • Entrepreneurial spirit. • B.A. degree, preferably in chemistry or a related field. • Brewing and distilling MSc Certificate. • 5-10 years experience as a qualified Master Distiller or Master Blender. • Experience in creating various spirits, including: single malt whiskey, bourbon, vodka, absinthe, and gin. • Strong relationship management skills. • Strong financial and analytical skills; keen business acumen.   20. I was wondering if distillers with some experience would comment a little on the day to day life of a distiller at an established distillery (not a startup). I am currently entertaining a number of job opportunities at the moment, some of which include positions as a distiller. I know a bit about the industry I've been involved in the past few years (geology: good money, lots of travel, fairly stable) but I'm realizing that I don't know as much about the real nitty gritty life of a distiller. In trying to convince my wife that this is a reasonable career move I've run up against a number of questions from her and from myself: 1. Are the hours reasonable enough that I could see my wife during daylight hours regularly each week? 2. Can distillers have healthy social/religious/family lives? 3. Can distillers expect to receive pay raises commensurate with experience, age, growth of the distillery, etc? 4. Were your immediate and extended family accepting of your career choice? 5. If you work hard is distilling a "stable job"? Basically, what is the life of a distiller at an established-profitable distillery like? I have had opportunities doing hard manual labor (field work, farm work, 25 gallon scale homebrewing) so that doesn't scare me, I guess I'm just more interested in how this career can affect other parts of your life. In the coming years are there going to be more opportunities for people with distilling experience (as startup distilleries become established and profitable)?
