    REGISTER HERE Early Bird $2,750 – ends October 15, 2021 Standard Registration Fee: $2,900 Returning to Ironroot Republic Distillery in Denison, TX for the 4th year, this very successful, in-depth master class will sell out early. Nancy Fraley (Internationally renowned independent Master Blender) will be teaching this class on all aspects of barrel maturation. Arrivals (Sunday) – Meet & Greet reception at the hotel – 7:30pm Day 1 (Monday) Our first day together will be spent in a classroom setting, as we examine the traditional philosophies and methods of blending whiskey, rum, and brandy, as well as “crossover” techniques in blending, such as borrowing from one tradition to the other to create something new. Other topics will include how the barrel room or warehouse can be used as a tool to achieve certain aromatic profiles, wood policy and cask management, the effects of entry proof, water reduction or “proofing” theories, the use of traditional blending tools such as boisé, laboratory equipment, etc We will also discuss the practical applications of blending, selecting and balancing the proper components for the blend to achieve a targeted spirit profile, and the impact on flavor of spirit and wood. Finally, we will look at fractional methods of blending. Day 2 (Tuesday) will be a “sensory” day devoted to putting the previous day’s theories to the test with nosing and tasting analysis of barrel samples, finished products, etc. We will learn what to look for when creating a blend when analyzing barrel samples. There will be a brief lecture on cellar management, the function and anatomy of the barrel, and the physiology of oak. Day 3 (Wednesday) will be a “hands-on” day where the class will be broken into groups and will be asked to replicate product “standards” which the instructor has created, that will be judged by other class participants. We will also discuss safety as it relates to the blending process. Finally, distillers Jonathon and Robert Likarish from Iron Root Republic will lead us on a tour of the barrel room and a tasting through their barrels. Departures (Thursday) Dallas airports are about one and a half hour away without traffic. We will finish Wednesday afternoon with experiential learning ending around 4:30pm (you can leave early if necessary), or you can leave on Thursday morning.   13. Hello everyone from Distillery University! We've been having a lot of success with our 3 and 5-day hands-on Workshops, so we've decided to double-down and start offering spirit-specific events, as well. Our first spirit Workshop is the Ultimate Gin Workshop, coming to Spokane, WA on January 14th and 15th, 2017. Students will learn everything there is to know about gin formulation, distillation, blending, etc. from award-winning distiller Todd Buckley. His gin was rated a 94 in 2014 by the Beverage Testing Institute, beating out big brands like Beefeater, Tanqueray and Bombay Sapphire (link). We'll also be covering botanical selection, and we'll have a collection of various botanical samples on hand to experience. These come courtesy of Morning Myst Botanics. As someone who personally built every piece of equipment in his distillery, he'll be covering equipment construction, design, layout and other considerations. Later on in the evening we'll adjourn to a local watering hole for a gin-focused sensory experience and tasting event. We'll sample 7 different gins and Todd will walk us through the different essences and botanicals we can perceive. The next day will consist of a half-day back in the classroom, then a trip out to Palouse Pint malthouse. Master Maltster Joel Williamson will give us a tour and allow us to sample his various types of malt. The March Workshop was an absolute success; we had folks come in from all 4 corners of the country to participate in the 5-day event and everyone left with a smile and new energy for their distillery project.   16. Hi everyone ! I'm looking for some professionnal advice on proofing liqueurs. We have a couple of interesting ideas but we lack some knowledge about proofing sweet spirits. I read other posts but to be honest I don't feel I know everything I should to commercialize a liqueur right now. We need to be pretty accurate when it come to alc. % etc. .. I'm in Eastern Canada so I would be please if someone in the Northeast would accept to receive me at their distillery to exchange on our practices and ideas ! Thanks guys Jean-Philippe
