  1. This may be a stupid question, but what is the guidance/tradition on barrel aging liqueurs? In all of my reading, I have never come across the subject and would like to store a few liqueurs in used barrels for finishing and bulk storage. More specifically, should the liqueurs be aged before dilution & sweetening or after? Does anyone have any experience with the comparative effects of both? For example, I could store a Nocino at 180PF and save a lot of volume, but I'm not sure how the barrel would react to that high of proof and concentrated walnut flavor. Alternatively, it could be diluted down to around 100 proof and sweetend before being stored. Any recommendations or advice?

  5. I am closing in on selecting a property for a startup craft distillery in Northern CA. The favorite one is two buildings on a single commercial lot. One would be the barrel storage building the other would house the distillery operations. The barrel storage building is brick surrounded with windows (see the attached image). I assume the precious liquid within would not be impacts by getting hit with sunlight through these windows, but wanted to get some feedback from anyone with knowledge on this. Thanks!
  6. Barrel Entry Proof... 100-110 for more water soluble wood sugars VS 115-125 for economics and more tannins... Char also plays a huge factor and if anyone would like to throw in their input on favorite char #s. I'm running a 95 rye at the moment, but will soon move on to bourbon (45 wheat), and then malt whiskey. I know there are a lot of factors at play here and if anyone has any good readings on this or a way for me to better educate myself on this subject I'm all ears. Thanks

  10. Hi all, hoping the neural network can help me out here, im going nuts. I know there is a TTB form or circular somewhere that gives the rules for how to create a barrel identification string, I know it exists because i have used it before... but for the life of me, i cant find it anymore. I DID find this page: https://ttb.gov/spirits/common_compliance_tax_issues-during-audits-ds.shtml But i know there is a part where it says you use the 2 digits of the year, then letters A - L to represent which month, then the 2 digit day... but i cant find that page, nor to i remember if anything else needs to be in the string. Help? thanks
  11. I recently read a new study published in Vine and Wine Open Access Journal . Here's the URL: https://oeno-one.eu/article/view/909/4304 The authors studied the transfer of oxygen through oak and between oak staves in a barrel. They found that whether the oak is wet or dry, there is no--or nearly no--oxygen transfer across the oak . Here is a quote, " "At the end of the measurement period, the dissolved oxygen level is lower than 0.5 mg.L-1. We can consider that oxygen transfer through imbibed oak wood is seriously limited because no oxygen transgresses through this porous material after 45 days." The study goes on to claim that oxygen passes through to the liquid from desorption (the oxygen which is already in the wood itself, but not from the outside of the barrel, leaches in) and oxygen passes between the staves--particularly where the staves are contacting with less pressure (nearer the bilge). Desorption accounts for a previously observed spike in oxygen in the first weeks of aging. I was pretty surprised by this study as I've always heard that the oak itself is permeable to oxygen. Instead, it seems like it's the barrel construction more than the wood which impacts oxygenation. This is a french study, so they used french oak--but I kind of doubt american oak would be substantially different. This study looks pretty legit to me. I read through their methods and I was fairly convinced--though I'm no scientist. I was curious if anyone else found this study convincing. It made me wonder about the claims of barrel alternatives like the "squarrel." If this study is correct, some kind of stave gap would be necessary if you are seeking oxygenation of your spirit.

  16. This is the whiskey thief that works and if you're just pulling samples, you ain't worried about it too much because it did not cost 400 bucks. I can make changes to length etc. But this model is 175.00 plus shipping. I have some on hand but usually can have yours ready in a couple days notice.   19. Hi everyone, I've been barreling bourbon for a little over a year now in 15 gallon barrels. My oldest barrels are about 13 months. I have a few questions about knowing when they've reached their peak quality and should be removed. 1) How long do people typically age product in 15 gal barrels to get the HIGHEST quality bourbon. If time was not a factor. I'm in the northeast US, we get all 4 seasons and have big seasonal temp swings. I realize this question can vary depending on a lot of different factors. Just a ballpark range would be helpful. 2) How would you describe the taste when it gets too oaky? Is the oak bitter? Acidic? Any obvious tasting notes? 3) I've noticed in my 5L barrel it will get worse, better, then really bad (I was afraid it was too oaky but let it ride) then REALLY good. Is it the same with larger barrels? If it starts to taste bitter or a barrel from a month earlier tastes more pleasant should i just empty the barrel? Or let it ride and move on to the next phase? Winter is taking hold here, so the aging process may more or less halt until spring since our rick-house is not insulated. Cheers!

  21. Hi Guys, I'm looking for info on painting and marking barrels. My guess is that I should avoid oil paint or stain (because leaching) but I haven't been able to find anything on the net that wasn't pintrest for my garden Any recommended paints or dyes? Greetings All We have purchased a stave mill about 1 hour from out cooperage, and are now producing new charred 53 gal oak barrels from MN oak Additionally we have recently tripled our output over the past year and now have many barrels of every size in stock- 5/10/15/30/53 gallon, and intend to have stock going forward Currently we are making our 1st production run of 53's, and will have about 100 extra ready to ship by the end of next week The 53's are $275/ea, and fit 6 to a pallet.
