  4. Hello, we've had a few commercial spirits out for several months and had made very small batch R&D gin for over year. We recently settled on a gin recipe and scaled up to full production. We use the same high quality organic cane natural spirit as our vodka at 40% and pass it through a gin basket on our small 200 liter column still. The vapor infused gin is collected, proofed to 48% ABV, filtered, stored, then proofed to 45% ABV for bottling. We've found that if the gin sits in a 55 gal drum for more than a few hours there is significant settling or stratification of flavor. For example, immediately after filtering, the gin will have the flavor profile we want, but after a few hours stored in a drum, it will taste different (more anise-forward, in this case, and the black pepper and juniper are significantly reduced). If we aggressively agitate / mix the stored gin in the drum, and take another sample, it tastes correct again. So, it seems as if some of the botanical flavors / oils are separating in storage. This obviously presents issues for consistency. Has anyone else experienced this issue? We had never heard of it before. Any solutions besides frequently mixing bulk containers? Thanks, Paul

  7. Greetings, Does anyone have any tips on how to prevent our gin from louching. We have distilled a 100 gallon batch of 100 proof base with botanicals in the pot into 36 gallons of on average 167 proof. We are smithing to between 90 and 94 proof.   10. We are selling a pair of 1000ltr (264gal) Copper Pot Stills made by HOGA (Spain) that have never been used. These stills at 100% copper and include: internal copper steam heating coils, pressure and heat gauges, vertical tub worm condensers, and stands for both the condensers and stills. One still has a 1000rpm agitator /mixer motor and the set up include a copper gin basket that can be connected in line between the still and condenser. We are based in Colorado and may be able to deliver.   13. Gidday, I own a small company in the outback of Australia called Fosseys. We are based in a small country town called Mildura. We make Gin and Whisky Our local area is known for making wine amongst other things, and we have a strong long summer days with clear skies and great soiled, not much in the way of rain, but it all makes for interesting drinkable products. My own personal background comes from making wine Fosseys Gin is a bit unique using grape spirit and several Australian native botanicals, at has proven to be very popular Fosseys Whisky uses our local malt barley and we mature our whisky on ex port barrels.   15. We are trying to create a traditional style of gin, in a compound style. We are very happy with our flavors and aromas but we have a whiskey-like color from the juniper/botanical extraction that we are having trouble removing. We have no louching occurring and our spirit is very clear after polishing. Carbon filtering is removing too much flavor, while still leaving some residual yellow color. My question is is there any way of removing the color from our spirit without completely removing all of the flavors? Is there a specific type of carbon that we should be using or another technique that works better? Any help would be greatly appreciated.

  20. We are switching our botanical infusion from a macerated gin to a vapor infused gin and are working through the baseline quantities of what we will need. Our recipe previously had about 11 pounds of botanicals macerated in a little over 100 gallons of 20 percent neutral spirits and distilled through a 500 liter pot still. We are now going to be distilling on a 1000 liter pot and will be distilling using a vapor basket rather than bathtubing it. Our basket can't even fit the 11 pounds unless you really jam it in and I don't want to risk blocking the condenser. I was looking through conversions and before I start throwing away money running some tests I wanted to see if anyone else had any basic conversions they recommend when converting botanical amounts from maceration to vapor basket. It sounds like you need less botanicals from vapor infusing, but I have heard that some essential oils don't get picked up as well in the basket. I would prefer to run the still full to reduce in utility costs but if it doesn't translate well then we might have to run smaller amounts. Any advice or opinions would help. Thanks guys.
