  1. Denver Distillery is seeking a creative, skilled and passionate individual to join our team in the heart of Denver CO as our head distiller. In this unique and exciting opportunity, you will play a central role in an upstart distillery which focuses on high-quality distillates themselves reflecting the energy of Colorado and our hometown of Denver. If you are interested in applying please send a resume to chris@denverdistillery.com Job Description As head distiller you will perform and oversee all manufacturing operations in our small, grain-to-glass distillery. Job responsibilities include selecting and ordering raw materials, setting operation schedules, creating recipes (we have 2 new whiskeys with incredibly unique mashbills we are working on right now), milling, mashing, fermenting, distilling, aging and blending, CIP, reporting to the feds, hand packaging our spirits. Must be excited to work with unique methodologies/ingredients such as dunder, kernza, sweet potatoes, smoked grains, queens share rum, katsu... As head distiller, you will also participate in promoting the distillery through various marketing efforts and by interacting with our patrons in our distillery pub. Our ideal candidate will have a Bachelor’s degree in science, brewing/fermentation science, or commensurate experience of 3-5 years as a distiller working in a commercial distillery. You must have extensive knowledge of distilling and brewing science, equipment, and systems with a particular emphasis on a self-driven individual who seeks to continually perfect themselves as a distiller. As a small distillery, problem solving is a must. Prior supervisory experience is a plus as the head distiller will manage a small cadre of workers in the manufacturing of our spirits. Must be able to lift 55lbs, twist/turn, reach over shoulders, bend, stand, or walk on a regular basis. We are looking for a creative and reliable individual who takes immense pride in the work they produce, to help lead our distillery as we grow our spirits and grow our distillery. About Denver Distillery We are a nano distillery in a repurposed historic hotel specializing in small batch, grain-to-glass spirits from natural and local ingredients. Located in a historic building along Denver’s vibrant South Broadway neighborhood, we are also the first distillery outside of an industrial zone in Denver. We employ old-school distillation techniques such as open-air fermentation, a hand-built copper still and thump keg while creating unique, new-school spirits. We currently make 14 different spirits (whiskeys, gin, rums, liqueurs, shochu, moonshine, absinthe etc.) with more to come. In this role, the Head Distiller works hand in hand with the owner and consulting Chief Distilling Officer overseeing all aspects of grain handling, fermentation, distillation, and barrel aging. The head distiller manages a growing team of associates and will also have a public-facing role in promoting the product and brand. This is an exciting role for an ambitious professional to help craft the style, vision, product and culture of a launch-phase distillery. Key Responsibilities Include the following: • Manage all aspects of production, including milling, mashing, fermentation, distillation, barreling, barrel management, and blending and bottling • Manage the day-to-day operations of the distillery, including employee management and key vendor coordination • Logging and record keeping to ensure product consistency and TTB compliance • Assist in new product formulation and development • Provide ongoing process optimization and production efficiency feedback • Oversee maintenance schedule for equipment and related process infrastructure • Ensure compliance with relevant health and safety regulations • Assist in sourcing and supply chain management for ingredients and other related product and production sourcing needs • Assist in shipping to retailers and distributors • Represent the distillery to the public • Maintain strict oversight of quality controls and product excellence Required Experience The ideal candidate has a 7+ years professional experience in the production of beer, wine or spirits, with 2+ years distilling experience preferred. A deep understanding of fermentation and distillation techniques and experience managing a team is also required. Specific skills and experiences also include: • Experience in all areas of distilled spirits production, including grain milling, mashing, fermentation, distillation, barreling, aging, blending and bottling • Experience developing and accentuating specific flavor profiles through ingredients choice and fermentation techniques • Experience managing and motivating a team, including hiring, training and scheduling • Familiarly with TTB regulations and requirements, as well as operational safety compliance • Experience with record keeping and data logging • Proficiency in MS Office and relevant industry compliance and tracking software systems • Preferred experience operating alembic pot stills • Preferred Bachelor’s degree in related field, such as brewing, microbiology, food science, fermentation or chemistry Additional Desired Traits and Attributes • Commitment to quality and desire to create a truly great product • Commitment to innovation and ongoing product and process improvement; relentless curiosity and desire for ongoing education and professional development • Commitment to collaboration in a team environment • Ability to problem-solve and improvise • Experience operating a forklift, tractor, and other heavy machinery .
