  1. As a SUNY instructor in craft distilling I realized I have a lot to offer anyone interested in learning more about distilling and/or starting a distillery. If anyone is interested in learning how to distill or have interest in starting a distillery I would be happy to assist, educate, and consult. We have gone thru everything, purchasing the building, sourcing the equipment, equipment installation, distillery set up, product development, TTB issues, proofing, bottling and Insurance issues and continue to learn valuable lessons that new distillers need to know.   3. Hello from Western Pennsylvania: My husband and i produce wine and beer and we are told we are pretty good at it. We have also recently started making cider which has challenges all of its own! We enjoy fine whiskey (single malt) bourbon and rye as well as traditional ginever and dry gins. We love to mix craft cocktails and make our own bitters. I joined the forum to learn more about craft distilling since we eventually plan on opening a small micro distillery and we want to learn as much as possible. Its a pleasure looking forward to seeing everyone on the forums. Does anyone have advice regarding malted grain sources in bulk?

  5. Hi everyone! Rockwell Rutter from Distillery University here. I wanted to give everyone an update on our Hands-on Workshop coming June 20-24 in Spokane, WA. The March Workshop was an absolute success; we had folks come in from all 4 corners of the country to participate in the 5-day event and everyone left with a smile and new energy for their distillery project. In addition to the classwork and the actual hands-on learning at Tinbender Craft Distillery, we also organized a few after-hours events for people to enjoy. We toured Spokane Industries (tank manufacturer) and held several group dinners and tasting events at local bars and restaurants. There were also a few surprise gifts for everyone (that I won't reveal here), except for one. In addition to the recorded footage of the entire Workshop now available through their account on DistilleryUniversity.com, and the accompanying Powerpoint presentations, attendees were also gifted an EXTENSIVE Business Plan Formulation tool. There are still a few more seats left for the Hands-on Whiskey Distilling Workshop, December 8-13, 2014, at Heritage Distilling Co., Gig Harbor WA. http://distilling.com/workshops.html Instructors: Jordan Via, of Breckenridge Distillery Justin Stiefel of Heritage Distilling Co. with Nancy Fraley, Sensory Analysis & Blending for Craft Distillers This hands-on class covers the fundamentals of grain-to-bottle whiskey production and business concerns in starting a distilled spirits plant. Participants will be able to smell and taste new make spirit as it is being distilled. Topics covered in this class include mash preparation, basics of fermentation and wash production, anatomy of a still, mechanics of distillation (stripping & spirit runs), “making the cuts,” barrel maturation, proofing, and bottling. Sensory evaluation instruction includes traditional philosophies and methods of blending whiskey, practical applications of blending, selecting and balancing the proper components to achieve a targeted flavor profile, and the impact of spirit and wood on flavor. Additional presentations for the start-up distiller include licensing, still design, record keeping, package design, formula and label approval, and marketing spirits.
