  2. Hi all, I'm just starting up and intend to certify my spirits as organic. I'm wondering if any of you have experience with this process and are willing to discuss what it takes to become certified organic (feel free to give your input in this forum as well). Specifically, I have questions about: What do you use to clean equipment? What's acceptable to use to increase or decrease mash pH? To label as "organic", you need 95% of the ingredients, by weight or volume, to be organic. I'm assuming that when making gin, the botanicals would not need to be organic if the raw grain used to make the base spirit is organic. Is that a correct assumption? I will appreciate any information you all can offer. Thanks!

  6. Our Absinthe Herb farm is finally established here in Colorado and this year we had an excess that I would be willing to sell. According to our partner in the farm, who happens to be a phd. plant biologist, the mile high elevation and dry climate forces the herbs to produce more aromatics. Whatever the case, these herbs are meticulously grown and taste and look SPECTACULAR! Our Grande Wormwood plot was established 6 years ago and I could spare about 100lbs (stripped weight) annually. This Grande Wormwood is super aromatic and almost sweet- not the bitter harsh stuff you sometimes get from France (sorry France, blame it on climate change). Our Lemon balm has come in strong too, I have a few lbs to spare and I will have excess next year. If you are sick of the typical minced brown lemon balm you get from bulk suppliers you will be blown away by this vivid green full leaf herb the way it was meant to be harvested. Petite and hyssop are taking a little longer to get established but as long as they keep doing well I should have excess of those by harvest season. These herbs have all been grown organically (we just don't have the cert yet). Private message me if you are interested- I feel bad stock piling all these amazing herbs!

If there are any distilleries interested in having some certified organic soft white wheat for use in their spirits production please let us know as we will be taking delivery of 3000 bushels to clean and bag over the next few weeks and hope to have it all ready for distribution sometime around the first of october. This will be all the soft white organic wheat we will have in stock till next harvest time in 2015 it will go quick so wanted to put the word out on here for distilleries to have first shot at it since our business is to provide craft distilleries with the organic products needed for high quality spirits.
