  1. So, we have stills (700 Gallon Stripping/300 Gallon Hybrid Pot Still), a boiler, fermentation tanks, a diaphragm pump, a small bottling line and an RO system. But really, that’s all we have at this point. We’re going to be primarily focused on whiskey production. I’m a very recent (about a month) crossover from the brewing world and have set up quite a few breweries in the past, but this isn’t very similar in my experience thus far. I could literally set up a brewery in no time, but I feel like I’m struggling here a bit with the task of identifying everything we need. If anyone has any time, I would greatly appreciate any feedback you’re willing to provide on the following list of things that I believe we still need. Here goes – · Air Compressor/Air Dryer/Filters. · Collection/Holding tanks -Low wines, Hearts, Tails, Blending? · Floor Scale (?). · Hoses (Distillery specific?). · Barrels. · Barrel Racking equipment. · Assorted Clamps, Gaskets, Valves, etc. · Thermometers (glass/digital). · Hydrometer/Alcometers. · Filtration system – Depth or Cartridge or both? · Flowmeters(?). · Cold Liquor Tank/ Chiller(?) (Unsure if Midwest city water is cool enough year-round). · Ethanol Detectors(s). · Forklift/Pallet Jack · Distillery Software. That’s where I’m currently at with this list. What did I miss? What don’t I need? I’ve generated this list by reading hours and years’ worth of this forum, independent research and insight from the very few folks I know in the industry. I’ve done my best to do my homework before asking for your collective assistance, so hopefully this doesn’t come across as a request to be “baby birded” the info. Thanks again.

  7. I would like to notify you of new opportunities we have opening up here at Grand Traverse Distillery in terms of whiskey production. Located in Traverse City we have been distilling Michigan grown grains since January of 2007. Starting with rye vodka we then expanded the line to include a variety of vodka products, whiskey, gin and rum. The past four years we have invested heavily in whiskey production, (100% straight rye whiskey and bourbon). Our Ole George 100% Straight Rye Whiskey is all rye, no corn or malted barley in the mash bill and has been awarded many top metals and best of category several years at the annual ADI meeting. Our current operation can supply all our clear spirit needs and we can put up around 200 53-gallon barrels of whiskey per year. In 2018 we have a new 2,500L whiskey still coming in from Holstein. This still can increase our production of whiskey well beyond our needs at this time and if we pick up five more fermentation tanks we would be able to distill around 600 53-gallon barrels per year. We have local farms that can supply our current and future grain requirements and with a local malting house only three miles from our distillery malted barley and malted rye needs are taken care of. What’s the bottom line? In 2018 and into the near future we have excess capacity for whiskey production. Are there distilleries that would be interested in contract whiskey distillation? If so let’s talk and see if we can help you increase your craft whiskey inventories. Just last fall we acquired an additional 5,000sf of barrel storage. Currently, we are aging over 650 barrels of whiskey and have room to age your spirit. If you choose we can also help your operation with aged product along with custom whiskey production.   9. Templeton Rye is looking for a Production Shift Lead with at least 5 years of production experience, 3 of which have ideally been in fermentation and distillation. This position will work out of the new Templeton Rye distillery in Templeton, IA. The Production Shift Lead will oversee and operate all equipment from grain receiving through milling, fermentation, distillation and final product approval tanks. My experience in spirits to date includes a work-study exchange with Hakkaisan Sake Brewery in Niigata, Japan, where my team reviewed the company’s struggling U.S. strategy, ultimately encouraging them to break ties with their current distributor, target fine-dining on-premise accounts, and invest heavily in exporting their shochu portfolio. I then worked for Castle Brands in New York as a summer intern, ostensibly acting as the assistant brand manager for Knappogue Castle and Jefferson’s Bourbon. I primarily worked to create a long-term brand plan for Knappogue 1951, retarget on-premise accounts, establish a sales incentive program, and pitch unorthodox marketing events.   18. Hi folks We're looking at multi shot production of gin on the smaller of our stills. My understanding is that for a x2 concentration multishot you would add twice the amount of botanicals to your standard charge (say 100 litres at 50% ABV). Once the new make spirit is collected this is diluted down with more alcohol before proofing to bottling strength. My instinct tells me that if the total spirit collected from our still was say 40 litres at 75% then we would add a further 30 litres of alcohol before proofing (40/100 x 75). Could anyone elaborate/confirm/deny. we are aware of other issue such as proportional scaling of ingredients etc. Any advice would be appreciated. My name is Raphaël Germain-Robin and I have worked as an apprentice assistant distiller at Stillwater Spirits through the American Distilling Institute (ADI) where I had received an internship through Bill Owens the President of ADI.   25. Skip Rock Distillers in Snohomish, WA (North of Seattle) is looking for a distillery production intern. We are a family owned craft distillery that takes a farm to bottle approach on everything we do. That means sourcing rye, potatoes, berries, apples and walnuts from local farmers. We have won numerous awards and have been in business since 2009. We use a Kothe still and have a pilot system for yeast trials, recipe development and other needs. Requirements: Be at least 21 years of age Interest in learning and building experience in small distillery operations Be on time and ready to learn Be able to lift at least 50 pounds Must be able to lift, stoop, kneel, climb and walk without issue; must be able to stand for extended periods of time Must have reliable transportation Must possess current, personal health insurance Prior knowledge of the brewing and distillation process is appreciated but not required Must not have a prior felony conviction or charge; be ready for a background check Additional requirements may arise at any time Technically, this is a “trainee” position where you will be able to learn a great deal about distilling and the craft spirits industry. Students at a university/college program might be able to obtain credit for this internship and we will work with you to help with that. The intern would be expected to be at the distillery 25-40 hours/week depending on schedules. We are typically in production Monday - Saturday, 9:00-5:00pm.
