  2. I have a small distillery and will have several small containers of feints from different distillation runs. When I do not have time to re-run them I will combine them into a larger container. I create separate tank transfer records for audit purposes. If I combine 2 containers into a 3rd, larger container that already has spirits in it I do them one at a time and end up proofing the larger tank twice. My question is, is it necessary to do this or can I combine both of the smaller containers into the larger container and proof it just once? John Baker Cats Eye Distillery, LLC
  3. We have our DSP permit and are about ready to do some small scale experimentation which will involve purchasing ingredients and producing spirits. We will probably either store the end results for later re-distillation or just dispose of it. Do we have to notify the TTB that we are operational (though technically we are not)? And if so what columns would we need to fill out in the monthly TTB reports? Any advice on this subject would be greatly appreciated. Thanks!

The TTB may combine the 3 monthly reports into a single report (two if you also produce industrial alcohol) This would mean a significant reduction in paperwork and staff time for small distilleries. It is important that we give them feedback supporting this change and comment on the proposed new form. It could use some fine tuning from the end users. They are accepting comments through Feb 3rd. The two proposed forms would be titled, TTB F 5110.77, Distilled Spirits Plant Operations Report—Beverage (Nonindustrial) Alcohol and TTB F 5110.78, Distilled Spirits Plant Operations Report— Industrial Alcohol. The proposed new forms would not require a DSP to report the level of detailed activity in the production, storage, and processing accounts that the current forms require. A DSP would be required to report the proof gallons of spirits in inventory at the plant as either produced, received, or removed during the reporting period.   5. Hello, We are brand new distillery recently licensed by the FED and working on our state license. I expect to have it done by mid-January and will then be off and running. Our operation is starting off very small so I am interested in simple solutions when they can be obtained (but I have not found one yet for this exercise) One of the major hurdles it seems everyone faces is taking the time to track daily activities and then complete the monthly and quarterly reports. We use Quickbooks for our accounting software but I am interested in what others are doing to comply with the regulations on monthly reports as well as daily logs. It seems many are using QB Manufacturing or POS and there are others that use the online distillingsolutions product. Any comments on other solutions and / or how to integrate this into your daily logs. Are you keeping paper logs and then re-entering the information into the computer on a regular basis?
