Job Description: Production Lead I - Distiller Send Resumes to: caitlin@vadistillery.com The Virginia Distillery Co., an American Single Malt Whisky distillery located in Lovingston, VA is seeking a Production Lead I - Distiller. This position is within our Operations Team organization and will strive to achieve our relentless pursuit of operations excellence. It is a very exciting time to join our fast-paced team where you will have the opportunity to work within a passionate close-knit group and support our rapid national expansion. We work hard to bring our category-defining American Single Malt Whisky to market. Our distilling operations started in November of 2015, and 2020 marked the year we launched our own flagship whisky brand, Courage & Conviction. We continually improve. We think big. We stay positive. This is a full-time position with benefits and will require availability as needed by the production schedule including morning, evening, overnight, or weekend shifts. The role will be located on-site at our Distillery in Lovingston, VA. Key Responsibilities · Maintaining the highest degree of safety with responsibility for yourself and fellow team members · Distilling operations including milling, mashing, distilling, cask filling and handling · Maintain meticulous records for all processes, operations, and compliance purposes · Maintain high standards of quality for production of spirits, casks, and finished goods, including performing routine and ad-hoc quality checks · Contribute to process improvement ideas & implementation, support of 5S initiatives, and our company culture of Continuous Improvement · Cleaning of all distillery, bottling, production, and common areas – we take our food beverage production facility cleanliness seriously! · Regular and predictable attendance at the work site, this role requires regular presence at the distillery production facilities · Support cellar operations including cask movement, spirit reductions, and warehouse logistics · Support bottling operations including rinsing, filling, corking, labeling, packing, and all other assembly needs Qualifications · Applicant must be dependable, reliable, professional, and comfortable working in various indoor and outdoor conditions · Beer, wine, or spirits industry operations experience. Brewing experience is preferred. · Strong problem-solving and equipment troubleshooting skills · Forklift truck operation · Prior experience in production or manufacturing operations, and the use of both general and process-specific brewing or distilling tools and equipment · Self-motivated and operates with a sense of urgency · Great ability to communicate and work well in a team-based highly collaborative environment.   3. What milling specs would you use for grain-in malt whiskey mashes? Looking for thoughts as they relate to efficiency and ease of processing/pumping. Are there any downsides to milling to/near flour? I recently tried a mash with malt milled to 1.8 and had a lot of problems running the mash through my impeller pump.

  5. A client of ours is interested in having malt whiskey produced for them so they'll have some aged stock available if/when they launch their own distillery. It would a custom mashbill, as they aim to explore some unique heritage and local malt (which they would source if needed). The client also has some transparency requirements as they have a carbon-offsetting and environmental accountability component to their business plan. The volume is still in flux, but it would be somewhere between 50-150 barrels depending on pricing/availability. They are based in Pacific Northwest but are open to other pitches. The timeline is soon, but not immediate If you've got some malt whiskey capacity, please message me and we can discuss the project further.
  6. I'm running into a lot of difficulty recently with my distillation/ fermentation. The symptoms are early onset of feints/ tails. I have tried increasing reflux in the still to continue the hearts cut but it isn't working. I have tried less reflux too. Fermentation appears to be good. Grain bill - 100% barley malt Starting gravity 1.061 Final gravity 0.997. Estimated ABV 8.38%. Final PH 4.19 Distillation Still - 250 litre pot with 3 plated column with dephlegmator. Heads and foreshots are compressed at the begining of the run - 100% reflux for 30 minutes and heads collected slowly afterwards. Cut is determined by taste a smell. Hearts- relfux is reduced and heating of pot is increased. Cut is determined by taste and smell. The average abv i was collecting before this was 81% ABV. I can achieve above 81% ABV initially but the abv drops fairly suddenly when about 25% of the expected hearts cut is obtained. The product becomes feinty after this point. I have checked the still for leaks but all the gaskets look fine. Any advice?

Distillery Production Staff Member – The Virginia Distillery Company The Virginia Distillery Company is seeking a Distillery Production Staff member to assist in distilling single malt spirit from 100% malted barley at our Lovingston, VA distillery. This person will be trained in the distillery’s particular production procedures including, but not limited to, milling, mashing, fermenting, distilling, warehousing, record keeping, cleaning, and effluent treatment. This person’ primary focus will be on producing single malt spirit at the direction of the Master Distiller and in coordination with other members of the production staff. Specific Responsibilities: Once trained, execute the distillery’s particular methods of milling, mashing, fermentation, distilling, warehousing, record keeping, cleaning, and effluent treatment, among other duties. Log and maintain detailed records of each phase of distilling for compliance and quality control purposes. Represent the brand in a respectful and appropriate manner at all times, both on and off the production floor. Take pride in maintaining a clean and orderly distillery at all times. Minimum requirements: Bachelor’s or advanced degree in sciences related to fermentation and/or distilling; experience in a related field may substitute for education at the discretion of the hiring manager A willingness to learn a unique standard operation procedure that may differ from prior experience Prior experience with machinery including pumps, steam generation and transmission systems, air compressors and/or glycol refrigeration systems. Strong organizational and time management skills Attention to detail Live in the Charlottesville or Lovingston area A passion for the history and science of whisky distillation Desired Qualifications: Prior whisk(e)y production experience; experience producing other craft beverages may substitute at the discretion of the hiring manager A positive attitude and willingness to learn a fascinating and centuries-old method of distilling the finest single malt whisky. This is a salaried, full-time position working exclusively at the Lovingston, VA production facility. The distillery will operate on eight-hour shifts, and the position does include the opportunity for overtime pay as well as paid time off. A background check and drug screen may be required.
