  4. I am in Alaska and need to get our water tested (everyone here just sends it out and is very expensive). My distiller said to find a place to do a full breakdown of what is in the water. Does anyone have a recommendation for a company on this? Also, any recommendations on water systems? Completing our build out now - hoping to be open in late March.
  5. We are going to recirculate water (to conserve) as our cooling water. How do you keep yours from going bad, without damaging water pumps? Could you ass citric acid or bleach? Any other thoughts?

  7. Saving water is critical in my neck of the wood-less woods. Of course we also want to design-in efficiency for time and energy use heating and cooling water. So, need some help/advice for the following: Considering using a tankless water heater pulling from a source tank of pre-filtered, pre-conditioned water to pre-heat mash water to 110 to 120 degrees. This then saves steam boiler time to heat to mashing temps. Considering a return tank to store heated condenser water. This heated water can be used for the CIP process, with the remainder cooled down overnight to return to the cold water tank that is the source water for chilling kept at chilled temp by the glycol chiller. So I am talking about three water tanks... one for the chilled water, one for the hot water return from the condenser and one for the pre-filtered conditioned water going to the tankless water heater for the mash water. The chilled water tank I am considering is poly - double-walled / insulated. I am thinking that the other two tanks need to be stainless because of the heat of the return water, and opportunity for plastic notes in the filtered/conditioned water. Interested in any comments, advice related to this. Thanks!
  8. I was curious if anyone has used non-RO water to proof their gin and if that has had any set-backs. e.g. chill haze or louching. On small test batches I have been using just filtered water with no issues, but perhaps once I get up to 1000 liters per batch I might run into something different. Any advice on this would be great.

  11. I have 5 used Armstrong WS heat exchangers available. They are 2 pass shell and tube designed for steam on the shell side and liquid on the tube side. Some surface rust but a wire wheel and a fresh coat of paint will make them look new. We are using one as an instant hot water heater when we have our boiler running. $400 each or $1,800 if you buy all 5. Willing to consider reasonable offers.

  15. I have 2 used Armstrong water pumps for sale. $100 each OR BEST OFFER. They were used in a hot water process in an industrial plant and all worked perfectly when removed last year. Pump heads are carbon steel and are Armstrong model 4270-06. Motors are Baldor .33HP 115/230 Volt single phase. Pumps sat under a barn lean to and will need to be pulled apart and cleaned up but should work perfectly fine. I am using 3 just like these in my operation.   16. Hey y'all, Doing some research concerning grappa production and I've found something that keeps popping up. Seems some producers water their grappas back to bottling proof in small doses over long periods of time, sometimes months. Is anyone out there doing this? Any resources out there explaining why this is done, and how it works? Thanks

  18. Having just finished the book "Water" by John Palmer, chapter 8 discusses different equipment for treating water to for brewing operations. I deducted from this chapter that a full blown water treatment process utilizes the following steps: 1. Sediment filter 2. UV Degradation 3. Granular Activated Carbon (GAC) 4. Mixed bed Ion Exchange (Deionizer) 5. Reverse Osmosis 6. Deaeration It seems to me like this might be a bit overkill, but I was interested in this forum's thoughts as to which of these (or which combinations) are used for your distilleries. For myself, I think that UV degradation + GAC + RO is probably sufficient, but go back and forth on the idea of adding a deionizer to that process. In reading about RO+DI water, it seems that it's generally not healthy for the human body (called "hungry water") because it absorbs nutrients and minerals from whatever it touches, but then thinking about this further, in flavored spirits (gin for example), I wonder if it would allow for higher suspension of more flavor compounds without as much louching or potential cloudiness. I'd be interested if anyone has any general thoughts on this theory as well. Lastly, does anyone use deaeration to remove dissolved gasses prior to bottling to reduce any potential oxygenation in the bottle? Thank you in advance for any thoughts you'd be willing to share on this matter.
  19. We are finalizing a location that has municipal water. I went ahead and had the relatively inexpensive ($100) Whitelabs report done. I'm posting here so that 1) if anyone has expertise in this area they can let us know if there are any red flags for this water and what kind of treatment we might want to consider and 2) so that other can see the types of info you get from Whitelabs just in case others are considering the analysis. Here are some basics about our water use: We plan to use water both for running a cooling coil/jacket for crash cooling and keeping fermenters cool and also the same water for mashing and for use in cooling during distillation runs. So we are concerned primarily about 1) the water quality ruining equipment and 2) the water quality hurting fermentation yields or flavors in the distillate. If it matters, we tentatively plan to run municipal water straight in the condenser and then out into a holding tank for use in mashing. The hope is to avoid having to buy a large chiller. We would probably buy a smaller chiller for use to control fermentation temperatures during the summer. We understand we would still be using more water in the condenser for distillation that we might need for mashing but the cost of water should be significantly less to start out then investing from the get go with a large chiller.   23. I am having a hard time getting info on the topic of water. What exactly do I need for the distillation process, and what do I need for the finishing process. A follow up, what filtration process do you all recommend. I have heard only use reverse osmosis, I've heard that this is unnecessary and overkill. Any info on what exactly I want in my water and how to get my municipal water filtered would be great. Thanks.
