I let my was settle for a day after ferment stops. Then rack it to leave the yeast in the fermenter. I do not put any of the yeast in my still if possible.

We don't rack but rather pump form the top rather than the bottom and it leaves a fairly well-compacted cake in the fermenter. One of our workers pumped from the bottom and honestly I couldnt tell any difference in the end product.
