You are 'spot on' with respect to what is craft. If I had the room I'd be processing nothing but whole grain. However, we have to work with what we can.

Regardin the use of NGS, I recently read through a forum where (unnamed) so called distilleries up by Chicago were simply mixing, not distilling, and didn't even have a still on premise. There should be an entirely different license for that. One which doesn't use the word distillery in it's title.

It's always appreciated to read an educated comment as yours. I do tend to be a bit direct when trying to get my point across.
