restaurant and micro distillery

Recommended Posts

I've gone through the searches, and I can't find an answer to this. Can a micro distillery have a restaurant attached to it, using a common entrance, or does the restaurant have to have separate entrance, walls, and kitchen? I want to add a brick oven pizzeria to my micro distillery. The dining area would be separated by a wall, but the oven would be in the distillery section. The two would not be used at the same time. Running a still and a brick oven at the same time is more than I can handle. The state and local are fine with the arrangement provided I do not sell alcohol for on premises consumption. I did a quick google and came up with one place that was a restaurant/ distillery. Anyone have any ideas where to start?

Where are you located?

I am quoting the cooling system for a distillery at a resort being redone at VA Beach (it has been a bear for the consulting engineer on the job, tho).

I think CA is going to be heading your way as well. I just quoted some systems out there and believe they can serve mixed drinks on-site, so I assume restaurants or bistros won't be far behind.

Federally - You may not conduct restaurant business on the premises qualified under federal law as a distilled spirits plant. Further, you can't sell any liquors at retail on distilled spirits plant premises. That is prohibited by law. If you want to locate the pizza oven on the DSP premises. you would have to ask TTB for a variance allowing you to do so. Alternately, you could build a fence around the oven and take it off premises, but you will have to have separate access - not through the distillery. You must also have access to the distillery from a public space that does not pass through the restaurant. And people entering the restaurant can't pass through the distillery.

State and locally - it is all over the place.

I'd cite the sources, but I'm on vacation in Hawaii and am not jumping into that. I'm posting this between beach times.

Reconfiguring the walls will be easier than getting the variance. Never mind the challenge of getting a fire marshall comfortable with having a high-temp oven in a distillery. Make sure the wall you build is a rated fire wall.
