  1. Hi! I've been a little quiet on the forum lately but on a question like liqueurs I can't resist. At Koval we make six different liqueurs with more to come. There is a lot of peeling, dicing and work involved. Depending on what you want to make, the level of difficulty and and marketability varies, especially if you don't want to use only flavor extracts. If you want to make fruit liqueur, for example, it might not be a good idea to use a grain base and a fruit base might be preferable. Generally, a grain base should be rather neutral for a liqueur - otherwise you drink a liqueur and feel like you are eating bread. One of my colleagues at Kothe Distilling Technologies, Dr. Klaus Hagmann, has written an entire book on liqueurs (unfortunately it is still awaiting translation from German into English). To answer your question - a liqueur can be made on every modern potstill. It is more a matter of the process that follow afterwards. Also, the question of botanical baskets for liqueurs has come up a number of times. Even for herbal liqueurs (or gin for that matter) I wouldn't go down that route.   2. Kothe Distilling Technologies Fall 2010 Workshop & Seminar Series Koval Distillery in Chicago is proud to host Kothe Distilling Technologies' fall workshops and seminar. The classes offered cover both basic and advanced distilling techniques and the legal and business aspects of starting a distillery. My wife, Dr. Hagmann and I host the KOTHE Distilling Technologies Workshops in Chicago at KOVAL Distillery and are happy to see that more education on microdistilling is taking place. Scott and Becky at Catoctin Creek are a great addition to this industry. It is sad to see how some established people are trying to shut out competition (if you want to see another distillery as competition). Microdistilling is still young in its current form. We are all in this together and know that protecting your brand is important. Let's not forget though that the market is big enough for all of us and the terms artisan, craft and boutique distilling should not be exclusive to one company / person.   11. Hey Charles, We hold a sensory seminar twice a year with about 80 samples, at least half of them fruit based spirits. It's essentially a shortened version of the training for spirits judges in Austria and Germany. My colleague Dr. Klaus Hagmann and I will conduct the next one in May.   12. Hey Jeff, I know of a program that does that - however it's for European distillers and calculates to 20C. We are in the process of creating an online tool for KOTHE distillers that allows you to input this data and get answers. It will be available late Q2 of 2010. Give me a call and I'll point you to the European one. You essentially have to change the temperature calculation, but it's still easier than the tables.   16. Dear Dave, Distilling is a craft as well as an art. There are distillers out there who have been distilling for years and can't get the product right. If you have someone developing the product with you, that's a good start. My grandfather has been a distiller for over 40 years and I work closely with other people in the KOTHE Network to get the products right. For example, we are happy that our Ginger Liqueur just won Best Spirit at the All Things Organic trade fair. It's still quite a challenge every time we try something new. Regarding the still operation, I'd say a couple weeks of training as a crash course should get you to the level where you can start running your still. Then you can start testing and figuring out what works and doesn't. All Kothe quotes include 3 weeks of training (1 x in Chicago, 1 x in Germany, 1 x on premise) and product development support. The Sensory Seminar will provide an insight into proper tasting of eau de vies, vodkas, whiskeys and liqueurs. Participants will sample over 50 different products and learn to identify positive as well as negative aspects of distillates. The second day of the Sensory Seminar and Advanced Workshop will focus on advanced distillation techniques and mash preparation. This workshop is aimed at experienced distillers and alcohol professionals. However, we don’t require any industry experience or other courses to register. We also offer the option to combine both spring workshops to make up a four day block.
