I would advise against SDS creation. Currently FDA is relaxing a lot of its regulation, however businesses (mostly hospitals) that need to know you have made your hand sanitizer properly are asking for SDS and specifically ingredient breakdown. This means that you need to make sure you specify if and what you have denatured your ethanol with - i.e. gasoline vs denatonium benzoate, etc.
