Full Time/Part Time Full-Time Job Description SUMMARY Responsible for managing the day to day operations for the distillation organization maintaining established compliance policies and procedures while delivering the stylistic and quality initiatives for the spirits products managed. Also is responsible for managing and developing a team of distillers that will carry-out established standards and policies. ESSENTIAL FUNCTIONS • Manages the production of continuous and alambic distillations. • Supervises the barreling, aging, processing and blending process of distillates as required for bottling. • Manages the appraising of raw materials for spirit quality; partners internal and external suppliers to provide recommendations regarding the cultivation of raw materials. • Participates in the tasting process; oversees the attainment of spirits flavor profiles which meet marketing needs. • Ensures the compliance of TTB and FDA regulations, facilitate standard operating procedures and related winemaking/distillation practices. • Maintains spirits internal “gold standard” specifications. • Conducts product presentations for internal and external customers. • Participates on cross-functional continuous improvement teams. • Interfaces with other resources/departments of the organization to ensure successful (productive, high quality and profitable) completion of distillation process. • Oversees the completion and success of the trials and experiments. • Works with the senior leadership team in developing policies and procedures for the distillation group. • Develops or approves recommendations to change systems, policies, and procedures; ensures timely and accurate implementation. • Develops and maintains operating budget and capital spending plan. • Monitors and ensures achievement of performance goals and objectives either directly or through subordinate staff. • Maintains an understanding of the full spectrum of the spirits production processes. • Oversees and handles projects that have short to long term focus. • Balances planning efforts with day to day demands. • Ensures employee conformance to established best practices and proper training of staff. • Ensures GMP. • Must maintain satisfactory attendance, to include timeliness. • Responsible for understanding and complying with applicable quality, environmental and safety regulatory considerations. MINIMUM QUALIFICATIONS • High school diploma or GED. • Bachelor of Science degree in Fermentation Science, Enology, Food Science plus 5 years of winemaking or distillation experience reflecting increasing levels of responsibility. • Knowledge of global winemaking and continuous/alambic distillation processes. • Knowledge of State and Federal regulations concerning wine and distilled spirits. PREFERRED QUALIFICATIONS • Bachelor of Science degree in Fermentation Science, Enology, Food Science plus 8 years of winemaking or distillation experience reflecting increasing levels of responsibility. • Master of Science degree in Enology, Fermentation Science or Food Science. • Experience reading, analyzing and interpreting common scientific and technical journals, financial reports and legal documents. • Experience responding to common inquiries or complaints from customers, regulatory agencies or members of the business community. • Experience effectively presenting information to top management and public groups. • Skilled in the use of MS Word, Excel, and PowerPoint at an intermediate level. • Skilled in applying concepts such as fractions, percentages, ratios, and proportions to practical situations. • Experience applying principles of logical or scientific thinking to a wide range of intellectual and practical problems. • Experience dealing with nonverbal symbolism (formulas, scientific equations, graphs, etc.) in its most difficult phases. • Experience dealing with a variety of abstract and concrete variables. • Experience working with all levels and functions within the company. • Experience driving work scheduling and prioritization at assigned location(s). • Demonstrated well-developed leadership qualities. • Comprehensive knowledge of production winemaking, brandy-making and spirits distillation including but not limited to process control, production processing, work scheduling and prioritizing and government regulations. • Experience applying comprehensive knowledge of particular field of specialization to the completion of difficult assignments. • Experience operating with substantial latitude for un-reviewed action or decision.
