  1. Hi, We have for 7 years now been using a small (Stilldragon) Carter Head on our 500 litre gin still. I have now been tasked with the job of designing and fabricating a much larger one to fit to our biggest still (2500 litre boiler). I just thought that someone out there might have been given a similar task and could advise on any pitfalls of scaling up from our present CH. I have trawled the web and can find very little info on CH design.
  2. I'm a little concerned that in my latest wash I put in too much sugar, so although the gravity is down below zero it still tastes sweet and it has stopped fermenting. It's the first time this has happened to me and I am wondering if this will make the vodka over sweet? I will be doing three stripping runs before putting it all into the vodka run. I'll then be distilling it again for gin - should I be worried?
