    Taconic Distillery (www.taconicdistillery.com) is a purveyor of fine spirits located in Stanfordville, New York in the scenic Hudson Valley. Our bourbon and rye whiskies are distilled from grains grown in New York and we have been in operation since 2013. Taconic is currently distributed in 12 states and has an on-site tasting room, expansive patio, fire pit and picnic area that are open on Saturdays year-round. Our awards include San Francisco Spirits – Gold & Silver medals, Jim Murray’s Whisky Bible – Multiple 90 plus ratings, Maxim Magazine – Best Bourbon, Hudson Valley Magazine - Best New Bourbon, Culinary Institute of America – Official Bourbon of the annual Beefsteak event. We are seeking an experienced distiller to run our recently installed Vendome continuous column still. We require an energetic and focused individual who is experienced in fermentation and distillation. This person will oversee a quality product through raw material sourcing all the way to bottling and packaging. A proven understanding of basic chemistry and the processes involved distilling; as well as a good set of basic computational skills are necessary. The ideal person has a history of success as a skilled distiller with the experience to deliver world-class spirits and the creativity to experiment with new ideas and products. The ability to work independently and manage significant responsibility are essential. Essential Duties & Responsibilities Perform every aspect of production including, milling, mashing, fermenting, distilling, tasting, barreling, proofing, and bottling Evaluate and monitor spirits produced and raw materials involved in distilling Perform regular testing throughout fermentation and distilling process to determine necessary information in producing a quality product Complete lab testing and quality control procedures focusing on continuous improvement Control all ordering and materials inventory to produce and control cost of goods or COGS. Manage raw ingredients inventories, schedule deliveries, and forecast production needs Supervise cleanliness and sanitation procedures for all distillery operations and equipment including compliance with CIP (Clean-In-Place) standards. Provide oversight of all distillery personnel and operations. Create and manage all record keeping in spreadsheets or any other required spirits programs suited for distillery. Clean all tanks by rinsing after cooking or fermentation is complete.     Experienced Distiller

    I am a seasoned distiller with 4 years under my belt and I am looking for growth at a new venue. I am looking for a Head Distiller position or a higher up position than assistant distilling. I have much experience with larger and smaller scale craft distilling from start to finish of the process, with a focus on whiskies and syrup based alcohols. I have done literally everything in a distillery from grain to bottle. I have helped to develop and grow a now flourishing distillery and am now ready to spread my wings, learn more and take on a new world. I have created and modified recipes for the distillery I worked for as well as for other distilleries under contract. I have made recipes increase their yield by 175% without changing grains or flavor of recipes, as well as managing employees, representing distilleries publically, creating huge online SOP / knowledge databases. I have a considerable amount of pride in making what I put my heart into and making the best spirits. Our new micro-distillery is due to open in September so the post is available with immediate effect. Working with our Creative Director Peter Mulryan, this position is focused solely on the production of Irish whiskey both malt and Irish Pot Still. We are not just looking to produce one or two types of spirit, but rather a whole range of pot still products. We therefore need someone with a huge amount of enthusiasm and energy, but with a real grasp of the brewing process as we will use a lot lesser-used grains. The position is based in Ballyduff, West Waterford (near Lismore); so it’s off the beaten path.     Chattanooga Whiskey Company is in the process of hiring a DISTILLER/MAINTENANCE SPECIALIST for our new craft production facility in downtown Chattanooga, TN - Outside Magazine’s two-time “BEST TOWN EVER” winner. This facility has been operating since late March of 2017 and has already put away over 600 barrels of whiskey to date. The Vendome distilling system is comprised of a 12 inch, 30 foot column still with a doubler, beer well, 3000 gallon cooker and 4 x 3000 gallon fermenters. Our distilling team lives by the phrase “Rules are Good, Change Them”, so your attitude and training should reflect a respect for tradition but also an openness and willingness to innovate and continuously improve. Every day we try to do better than the last – which includes everything from the way you organize your workspace to how you clean a tank, to the way you approach building or executing a recipe. We want to build the best bourbon and whiskey possible, and our people (and their attitudes) are the most important ingredient to that recipe. We currently offer 1816 – an 8 year old, award winning, world-class, traditional bourbon blended and bottled by yours truly. In August 2017 we released the first batch of our single batch Experimental Series from our 2.5 year-old Experimental facility and tasting room on Market St. Some of those recipes have already "graduated" up to our larger facility on Riverfront Parkway. MAINTENANCE SPECIALIST / DISTILLER Qualifications: • Manufacturing experience, preferably in the food/beverage or distilling/brewing environments • Formal technical education or varied and extensive hands on experience in many trades (electrical, plumbing, mechanical) • Familiarity, knowledge or experience in the brewing/distilling trades • Proven ability to work with little to no supervision • Extremely detail oriented • Experience in MS Excel • Highly safety conscious with respect to equipment and lock-out procedures. Distiller responsibilities include all aspects of grain to glass production of whiskey: • Receipt of raw materials • Milling, mashing and fermentation management • Transferring of mash, fermentations, high wines, etc. • Distillation on continuous column still • Barrel filling, dumping, proofing • Bottling, packaging and shipping/receiving • Guiding occasional tours of the distillery • Inventory management and materials ordering • Single barrel micro distillery activities and shifts Maintenance-focused responsibilities include but not limited to: • Developing a maintenance schedule on crucial equipment as well as maintaining clean and well-stocked maintenance tools and parts storage. • Performing facility breakdown and preventative maintenance tasks for all electrical, plumbing and mechanical systems related to the distilling operation as well as those related to distillery functionality. These include but not limited to: o Cooling tower o Pumps and motors o Boiler o Chiller o Heat exchangers o Compressed air systems o HVAC o Electrical components – drives, transmitters, etc. o Plumbing components – water (city, cooling tower, chilled) • Building, welding, painting, and plumbing activities related to improving existing systems • Teaming with other production staff to encourage proper use and care of all equipment.
