Role Seeking: Distiller-in-Training / Production Assistant Compensation: Depending Upon Experience Description: Golden Moon is a small but rapidly growing distillery that produces premium hand-crafted whiskies, brandies and herbal liquors and liqueurs using the best available herbs, spices and botanicals, and made with the same type of artisan production processes utilized by distillers making premium products in the mid-to-late 1800s. We are currently going through an expansion that will greatly increase our yearly production and will require additional production and tasting room personnel.     Corn Mashing Temp

    I was checking to see on what temperature to mash the corn? I have seen multiple articles and many different temperatures to Mash. Anywhere from 212-155. Any thoughts?

Candidates should have some experience in either brewing or distilling, with a basic knowledge of mashing and an basic understanding of what distilling is.     Electric Steam Generator

    Has anyone looked into using an electric steam generator for heating their mash tun and/or still? I'm just starting to look at this option and wanted to see if anyone has experience on the matter. A boiler would be great, but I'm in a rental space in which I don't plan to stay in past 3-5 years and I'd also be responsible for installing and subsequently removing everything I alter while I occupy the space. This seems like a reasonable alternative to get the steam heating I desire and still keep my impact on the space low.

    What to do with spent mash??

    We are a distillery that is going to be opening in the next couple months in North Carolina. I wanted to ask around and get some good ideas of what other people in the industry are doing with their used mash. I have a pretty good idea, but to make it better id love to hear some other techniques that people use. it will be 100% corn mash. Thanks in advance!

    Sour Mashing (which stillage?)

    Hi to all, First post. So please bear with me! We're interested in trying sour mashing... I'm pretty sure about the answer but I'd like to confirm. I've looked around but didn't find a clear answer. The stillage used in sour mashing is from the stripping run only? Is there anything that can be done with the spirit run stillage? Or is that just plain waste. EI: what do you guys do with this? In the case of a single malt style whisky. Would we add the backset when adding the malted barley or before. And, should we include grains (from the backset) or just liquid. Thanks for the help! Charles B.

  9. Finally executed a lease and I could use some help finalizing my still designs and power generation choice. I have attached our processing unit schematics. My cousin, a former Seneca master fabricator is completing the work. We are going to purchase a NG boiler and I would like to design a system that utilizes both DSI for the corn mashing and a closed loop for the for the stripping and spirits stills. My questions are related to size of boiler to purchase and how to best do both the DSI and loop, as well as... Will my system work? What advice have you got on the designs? What size boiler should I buy to operate this equipment? How do I best size the internal steam coils for optimal results? Any additional comments are welcome. The system is laid out as such: 1. 300 gallons of mash is made in a 400 gallon (DSI) mash tun. Raw materials for mashes include corn, oats, rye, winter/ spring wheat, malt, and potatoes for vodka. 2. Ferments are completed in 300 gallon air-locked vats. 3. 150 gallons goes into the stripper ( internal closed loop steam coil)and 150 gallons goes into the preheater/ product condenser. 4. 2 runs completed to make 102 gallons of low wines. 5. 102 gallons of low wines are pumped to the Spirit Still. 28 gallons of water are added to a total volume of 130 gallons (internal closed loop steam coil). 6. The 130 gallons of low wines are distilled resulting in 60 gallons at 70% abv.

    Bottom dumping hopper

    Good morning, We have a bottom dumping grain hopper for sale. Fork-lift pick points, 45x48x48....great for mashing in, conveying stillage (cooled), and other tasks in a distillery. We used it for mashing in separate grains as needed. We upgraded our grain handling a while back and just don't have a need for this any longer.     Water Chemistry

    So I just got the new municipal water report. What are the acceptable levels of chlorine and iron so as not to inhibit fermentation? The report lists a range of chlorine levels detected between 0.28 -0.77 with an MRDLG = 4 Iron was listed as .07 with an MCLG of N/A and MCL at 1.0 Not a chemist, but learning fast. Any input would be appreciated.

  14. Hi there, New ADI member and first time poster. I am planning out a purchase list for my first RIMS system and wanted to bounce my efforts off the community here to see if I'm on the right track. I currently have a 26 gallon column distillation spirits still that I plan to use during my proof of concept phase and want to invest in the mashing aspect of the process to mimic a large scale, commercial quality distillery design. I'm targeting around 75 gallons as my mashing volume size initially, which should effectively utilize my still's volume capability once a beer stripping run is performed. Also, what are the the opinions on heating an HLT tank of this size - electric or direct fire/flame? If feedback suggests direct flame, I may find a simplier and less expensive control panel for the RIMS system. Any help or sharing of personal experiences would be greatly appreciated.
