Hello,

I am putting together a feasability study for a distillery in the Dallas, Texas area. I'd be making a corn based product in a modified pot still. I'm looking for a good source of steam rolled or steam flaked corn. Any suggestions? I'm also wondering if there are any classes or workshops in the Dallas area.

Right now, I'm trying to determine the production costs and what level of production will be required to make a profit. I'm probably going to make a trip Austin and talk to the four distillers in that area pretty soon.

Howdy, I am in the process of doing the same thing down in the Lufkin/Crockett area, but I will be making a cane based product. I know that there are very few distilleries in Texas. Have you already started the TABC process?
