Enzymes for Peaches

I am wanting to make some peach ALC next summer as I had a huge over production this year and didn't know what to do with all of them, the largest harvest ever. I am not sure what the best way is to break them down after I have pressed them I want to keep the juice nice and clear like when they are canned but I also want to be able to get the most juice I can without over pressing. Any Ideas?
