Ventilation???

Is there a minimum ventilation standard? The space is a 1200sf in a multi tenant building. The architect said that fire dampers in the current HVAC system would likely have to be installed and adding a stand alone ventilation system. Would an ambient air ventilation system out through the window suffice? The windows exit at street level. Thanks!

5 air exchanges per hour is the recommended minimum. DISCUS Fire Protection Manual says 1cfm per sqft, which for a typical distillery ceiling, works out to about the same.

You want exhaust pulling low in fermentation, barrel aging and spirit storage spaces. High and low for around the still, assuming you have spirit sitting near it. Hot vapor leaving the still via a leak or an incident will go up. Otherwise alcohol vapor and CO2 are heavier than air and will sink.
