Bite/Heat

I make deep cuts on the heads, and cut tails early, so when I notice more of a bite it is usually from running a little too fast.  Slower runs seem to come out smoother regardless of where I make my cuts.

That's an exceptionally broad question.  That's kind of like asking a Dr why your head hurts ..

I'm getting a very intense bite on the back end that just lingers in the throat. The nose and the front end are very good. I'm just getting heat on the back.

After distillation and its been proofed back or during the run? (All spirits have a bite when freshly distlled)

Temp/yeast used for fermentation? (Hot ferms tend to have more heat/astringency.

Yeast nutrients (specifically DAP) can cause it. 

It could be an infection if it's only noticed occasionally or your heads cut may be too narrow... 

It may just be the burn of unadulterated booze.
