changing water in bain-marie still

Hi,

 

How often should you change the water in the jacket of a bain-marie still? Also, is it best using distilled water or any water would do? The jacket is in stainless if it matters.

Don't know i run oil.   I would guess that it doesn't matter either way on the water and just keep it topped of and you will be fine. 

Why are you not running oil?

I thought you had more fine tuning control with water than you have with oil. Why did you choose to use oil instead of water? what are the pros?

The closer the wort gets to boiling the less effective water is with heat transfer. You can only heat regular water to ~212. Heat transfers work better the bigger the differential is between the two temps.

Don't use distilled water, it is corrosive. Depending on what metal comes into contact with the bain marie, you may need to condition it to minimize corrosion. You may want to reduce the mineral content to avoid scaling, or add a descaler, but you don't want to go to completely distilled water. Your bain marie is essentially a boiler, treat it as such.
