Yeast recommendation for honey

Just as the title says, looking for a recommendation on a yeast strain for a honey distillate.

Racking my brain over this one.  If you don't want to share what strains you use successfully, please share the ones that didn't work well.

Silk no I have not, sorry.  But for a straight forward dry mead that is what I use.  You could also use EC-1118 but for mead making you need to get some age on it post fermentation.  Not sure which would work best for a distillate.  Those would be my recommendations for fermenting honey.  If you were adding fruit (melomel style) I would use K1-V1116 to  accentuate more of the fruit.  but again never distilled it.  I would imagine you would want a good mead to make good honey liquor.

Yeah I've done some trials and have used the usual suspects, D-47, EC-1118, DV-10.  There is great information from the mead community, especially around nutrients, which is fantastic.

ec-1118 +DAP +fermaid  K will make a pretty nice mead. Ive not ever distilled it as the mead was so tasty on its own. Let us know how it goes for you.

This is a great topic. I am also looking to make a small batch spirit from honey and am wondering about how long it's taking for your honey-based meads to ferment?
