	 first day together will be spent in a classroom setting\, as we examine t
	he traditional philosophies and methods of blending whiskey\, rum\, and br
	andy\, as well as “crossover” techniques in blending\, such as borrowi
	ng from one tradition to the other to create something new.\n\n\n\n	Other 
	topics will include how the barrel room or warehouse can be used as a tool
	 to achieve certain aromatic profiles\, wood policy and cask management\, 
	the effects of entry proof\, water reduction or “proofing” theories\, 
	the use of traditional blending tools such as boisé\, laboratory equipmen
	t\, etc\n\n\n\n	We will also discuss the practical applications of blendin
	g\, selecting and balancing the proper components for the blend to achieve
	 a targeted spirit profile\, and the impact on flavor of spirit and wood. 
	Finally\, we will look at fractional methods of blending.\n\n\n\n	Day 2 (
	Tuesday 12/09) will be a “sensory” day devoted to putting the previou
	s day’s theories to the test with nosing and tasting analysis of barrel 
	samples\, finished products\, etc. We will learn what to look for when cre
	ating a blend when analyzing barrel samples. There will be a brief lecture
	 on cellar management\, the function and anatomy of the barrel\, and the p
	hysiology of oak.\n\n\n\n	Day 3 (Wednesday 12/10) will be a “hands-on
	” day where the class will be broken into groups and will be asked to re
	plicate product “standards” which the instructor has created\, that wi
	ll be judged by other class participants. We will also discuss safety as i
	t relates to the blending process. Finally\, distillers Jonathon and Rober
	t Likarish from Iron Root Republic will lead us on a tour of the barrel ro
	om and a tasting through their barrels. \n\n\n\n	Dallas airports are abou

	maturation masterclass this year again.\n		\n\n		\n			The class was first 
	taught at ADI 2013 in Denver. In 2017 the class expanded from three hours 
	to three days\, added on the hands blending experience and moved location 
	to Ironroot Republic Distillery in Denison\, TX.\n		\n\n		\n			The 2024 
	workshop is our sixth year hosted by our friends at Ironroot Republic\, wh
	ich is one of the most international renowned distilleries in the world. W
	e are excited for the deep insight and discussion from these two extraordi
	nary teachers and our hosts.\n		\n\n		\n			 \n		\n\n		\n			Arrivals (Sund

	\n			Day 1 (Monday 12/9)\n		\n\n		\n			Our first day together will be spen
	t in a classroom setting\, as we examine the traditional philosophies and 
	methods of blending whiskey\, rum\, and brandy\, as well as “crossover
	” techniques in blending\, such as borrowing from one tradition to the o
	ther to create something new.\n		\n\n		\n			Other topics will include how 
	the barrel room or warehouse can be used as a tool to achieve certain arom
	atic profiles\, wood policy and cask management\, the effects of entry pro
	of\, water reduction or “proofing” theories\, the use of traditional b
	lending tools such as boisé\, laboratory equipment\, etc\n		\n\n		\n			We
	 will also discuss the practical applications of blending\, selecting and 
	balancing the proper components for the blend to achieve a targeted spirit
	 profile\, and the impact on flavor of spirit and wood. Finally\, we will 
	look at fractional methods of blending.\n		\n\n		\n			Day 2 (Tuesday 12/1
	0) will be a “sensory” day devoted to putting the previous day’s th
	eories to the test with nosing and tasting analysis of barrel samples\, fi
	nished products\, etc. We will learn what to look for when creating a blen
	d when analyzing barrel samples. There will be a brief lecture on cellar m
	anagement\, the function and anatomy of the barrel\, and the physiology of
	 oak.\n		\n\n		\n			Day 3 (Wednesday 12/11) will be a “hands-on” day 
	where the class will be broken into groups and will be asked to replicate 
	product “standards” which the instructor has created\, that will be ju
	dged by other class participants. We will also discuss safety as it relate
	s to the blending process. Finally\, distillers Jonathon and Robert Likari
	sh from Iron Root Republic will lead us on a tour of the barrel room and a
	 tasting through their barrels. \n		\n\n		\n			Dallas airports are about 
	one and a half hour away without traffic. We will finish Wednesday afterno
	on with experiential learning ending around 4:30pm (you can leave early if

	nstrumental part of the first ADI classes at Stillwater distillery in Peta
	luma\, California. The majority of those students went on to found distill
	eries in the US (click here).\n\n\n\n	Jordan went on to co-found Breckenr
	idge Spirits in Colorado\, where he installed and operated his first colum
	n still. Over the years\, Jordan has taught numerous week-long workshops i
	n distillery operations for ADI.\n\n\n\n	Returning to the San Francisco Ba
	y Area after a decade\, Jordan has added Master Distiller at another world
	-class distillery to his resume: Savage &amp\; Cooke. Citing Dave Pickerel

	nce and moved location to Ironroot Republic Distillery in Denison\, TX.\
	n\n\n\n	The 2023 workshop is our fifth year hosted by our friends at Iron
	root Republic\, which is one of the most international renowned distilleri
	es in the world. We are excited for the deep insight and discussion from t
	hese two extraordinary teachers.\n\n\n\n	Arrivals (Sunday 12/3) – Meet &
	amp\; Greet reception at the hotel – 7:30pm\n\n\n\n	Day 1 (Monday 12/4)\
	n\n\n\n	Our first day together will be spent in a classroom setting\, as w
	e examine the traditional philosophies and methods of blending whiskey\, r
	um\, and brandy\, as well as “crossover” techniques in blending\, such
	 as borrowing from one tradition to the other to create something new.\n\n
	\n\n	Other topics will include how the barrel room or warehouse can be use
	d as a tool to achieve certain aromatic profiles\, wood policy and cask ma
	nagement\, the effects of entry proof\, water reduction or “proofing” 
	theories\, the use of traditional blending tools such as boisé\, laborato
	ry equipment\, etc\n\n\n\n	We will also discuss the practical applications
	 of blending\, selecting and balancing the proper components for the blend
	 to achieve a targeted spirit profile\, and the impact on flavor of spirit
	 and wood. Finally\, we will look at fractional methods of blending.\n\n\n
	\n	Day 2 (Tuesday12/5) will be a “sensory” day devoted to putting th
	e previous day’s theories to the test with nosing and tasting analysis o
	f barrel samples\, finished products\, etc. We will learn what to look for
	 when creating a blend when analyzing barrel samples. There will be a brie
	f lecture on cellar management\, the function and anatomy of the barrel\, 
	and the physiology of oak.\n\n\n\n	Day 3 (Wednesday 12/6) will be a “ha
	nds-on” day where the class will be broken into groups and will be asked
	 to replicate product “standards” which the instructor has created\, t
	hat will be judged by other class participants. We will also discuss safet
	y as it relates to the blending process. Finally\, distillers Jonathon and
	 Robert Likarish from Iron Root Republic will lead us on a tour of the bar

	 colour. Such malts are produced under conditions of high temperature\, wh
	ich results in non-enzymatic browning and an increased concentration of ar
	omatic constituents\, primarily through the action of Maillard chemistry. 
	The majority of Scotch malt whisky is made using lightly kilned malted bar
	ley that yields only delicate aromas to the finished product\, and the cha
	racteristics differentiating whisky of one distillery from another is prim
	arily introduced by varied fermentation\, distillation and maturation prac
	tices. With demand increasing for greater product variety\, there is incre
	asing interest in the use of specialty malts as a tool for aroma control. 
	However\, current knowledge relating to the use of high colour malt for wh
	isky production is largely anecdotal\, and the substantial differences bet
	ween distillery and brewery practice necessitate investigation.\n\n\n\n	Ou
	r research group at Heriot-Watt University are investigating the impact of
	 malt roasting conditions on efficiency of wort/wash production and result
	ing aroma volatile composition of distillate. Samples of pot still malt we
	re roasted at laboratory scale and incorporated to distillery grist across
	 a range of inclusion rates (10-50% w/w). Experimental grists were mashed\
	, fermented and double-distilled in 2 L copper pot stills. Grain processin
	g characteristics were assessed using industry recognised methodology and 
	distillate aroma was assessed using GC-MS. Designed experimentation was em
	ployed to produce response surface models\, assessing the impact of roasti
	ng temperature and time on measured qualities in malt\, wort\, wash and sp
	irit.\n\n\n\n	The results demonstrated that although use of roasted malt f
	or distillate production reduced alcohol yield\, there was a substantial i
	ncrease in number and concentration of heat-derived flavour-active molecul
	es in the distillate. Appropriate selection of malt roasting conditions an
	d grist composition were identified as key for limiting impact of high col
	our malts on ethanol yield whilst retaining a significant impact on aroma 
	volatile profile. The findings of our study have considerable implications
	 for the commercial use of roasted malts in whisky production\, and for th
	e production of roasted malts directed towards the distilling industry. \
	n\n\n\n	BIOGRAPHY:\n\n\n\n	Rutele Marciulionyte holds a BSc degree in Medi
	cinal and Biological Chemistry from The University of Edinburgh. For sever
	al years she worked at Thermo Fisher Scientific\, developing\, validating 
	and utilising analytical methods for product quality control. Currently Ru
	tele is a PhD student at Heriot-Watt University\, where she combines her p
	assion for both chemistry and Scotch whisky. Although she is fascinated ab
