  3. We are adding an additional still. It is a small continuous column stripper capable to processing 100 liters of wash per hour. My chiller cannot cool the still fast enough (the chiller pump is the problem along with the size of the condenser) so I an considering chilling water and using a submersible pump to provide the cooling that is necessary to the still. To see if this will work as I hope, I am going to set up a 55 gallon barrel with water and ice and a submersible pump. If this works out, I will build a coil out of copper tubing to insert into the barrel to keep the temperature down and be able to circulate the water. I have no idea how much copper tubing is needed to bring down the temperature of 55 gallons of water from room temperature, 85 degrees F (worst case) to 50 degrees F. My chiller is set to 42 degrees. Any idea how much tubing would be required? Is there a better way to accomplish my goal of moving more coolant through the condenser?
  4. Thanks. Do you use a standard pond water algaecide? I'm going to have to do something similar. From what I have read of water storage, if you have an opaque container algae cannot grow, no photosynthesis.

  6. Meerkat, in reading your previous posts it seemed that you directed people to the TTB proofing method as being the only accurate way to determine final proof when adding sugar and flavoring. What is different in this instance?
  7. How are you treating your water? How long can you use the same water prior to changing it out?
  8. You cannot calculate the ABV. Search this site for the word "obscuration" and you will find many explanations on how to get this done. Then look at the video on the TTB web site at https://www.ttb.gov/distilled-spirits/proofing-tutorial
  9. We provide our spirits to a warehouse run by the State of Ohio which then provides the spirits to restaurants and bars. We have a salesman that calls on bar/restaurant owners/managers and offers tastings to see if they would like to carry our spirits. This method works very well for another distillery in Ohio but it has not worked for us very well. How many in-person contacts should we expect our salesman to make each week? We do tours/tastings and our spirits are well received by the buying public and the call reports from our salesman give nothing be glowing reports on the tastings he has had with the bar/restaurant owners/managers. Any and all input is greatly appreciated.

  13. Like Golden Beaver has said, you need to get local buy in before you worry about TTB. There are many posts on this forum with the term AHJ (Authority Having Jurisdiction). Search on AHJ and read all the posts. This will help to prepare you for what comes next. If your AHJ don't want a distillery where you want to put it, its not likely to happen. On the other hand, if they are welcoming to you than the next step is the architect that @Golden Beaver Distillery wrote about.

Cleveland Maidan is 100% volunteer and on their own nickel some of the volunteers are in Poland at this moment helping refugees.

  18. We've used an eDrometer as a quick check along with our certified hydrometers for many years but it is no longer manufactured. You might be able to find a used one.   19. AHJ = Authority Having Jurisdiction such as your fire inspector. He's the boss and you will have difficulty challenging him. This is not part of the fire code but he gets to interpret it anyway he wishes. The only people who might be able to challenge his decision or get him to take a second look would be a company like Dalkita that teaches and consults on this topic. On the other hand, this might really upset your AHJ because you did not accept his decision and make him start to nitpick. Dalkita.com I'm sure that there are distilleries that have explosion proof forklifts but we are not one of them. We had an extensive code review done prior to building our distillery and an explosion proof forklift is not a requirement in the national fire code. The focus was on classified areas and air exchanges to make certain that things were safe. We took it step beyond by wiring an exhaust fan into our ethanol vapor detector along with an alarm if vapor is detected.

  22. Since you have conflicting opinions to your original post, you need to ask the TTB or a beverage attorney. My understanding of the regulations is a complete separation is require (floor to ceiling) and the door between the two must be locked with TTB approved locks. This is information provided to us via a former TTB examiner that acted as a consultant for us in the application process. What you don't need to do is have a visit from the TTB and find out what you should have done in the first place.
