  1. yes, 2% of overall botanical bill. I will try upping the angelica and see how this works out.
  2. Hi, I have juniper, angelica root, lemon peels, spruce tips, bay leaves and cardamom. the angelica root is there. is the proportion the issue? we have 2% angelica root. is this too low?
  3. Hi, Is there any advice that the folks here can give to keep the nose on the gin? What I mean is that the nose seems to degrade overtime for the gin I am making. I use spruce tips and in the first few days the pine/citrusy characteristics are all there. give it a week and it all but disappears. The palate still has intense spruce flavors so I am not worried about that but the nose is just flat. I know a lot of this depends on the botanicals so I am asking a more general question. Has any of you run into the problem of your gin being flat on the nose but great on the palate. How did you solve it? Thanks in advance.
  4. We end up testing around 5 bottles and we dont do it that much differently from what Tom suggested. Never had any issues because we check if our equipment is dialed in correctly frequently. Just curious of there was a standard for sampling that the TTB expects.
  5. Golden, do you use FedEx for DTC shipping? We have a shipping agreement with them but when I asked for DTC they said this is not something they provide for spirits. For spirits they told me that they can only ship to another license holder. Could just be that the person I spoke to was not familiar with this.
  6. Thanks! will reach out to them. Found lots of carriers willing to take wine and beer but seems they dont want to take spirits because it can be revoked by the end of the year.
  7. Hello, Can anyone recommend a shipping company that ships alcohol directly to consumers in California? We are thinking about taking advantage of AB 920 (while its still around) but we are having a hard time finding someone who will ship spirits direct to consumers. Checked with Fedex and DHL. They only ship to other license holders for spirits. Thanks in advance.
  8. Hello, We are in the process of applying for our license and one of the requirements is submitting a floor plan. Does anyone have any experience creating this themselves and can share any tips in terms of what to look out for? Thank you for the help!
