  1. Awesome! That is very exciting. Keep me updated, can't wait to see how everything turns out! I think you have a lot of options for the cedar, even if it's just chips or decorative boxes, for sure. Good luck!
  2. Hey Jose, I have never put finished spirit through a centrifuge, but here is how we dealt with clarifying spirits at my last distillery- 1. Agar agar fining agent, let is sit and let the solids settle over the course of a couple of days, preferably in a cold environment 2. Rack off the clarified spirit, being careful not to disturb the bottom 3. Filter as slow as you can, through nothing bigger than 20 micron. Depending on the spirit, we would go down to 1 micron, or carbon. It is a little labor intensive, but that was how we got the best results with our amari and other liqueurs.

  5. Revival rum - did you end up using the clay amphora? How did that turn out?
  6. I am setting up a new distillery, and the local sanitation wastewater treatment plant is concerned about what we will be putting down the drain. I will be making rum, vodka, and gin, all from a molasses base. The dunder will go to local farmers, so the plant operator's concern of high COD and BOD and solids is nothing to worry about there. I will be making the vodka/gin from the redistilled tails of the rum run. What I am wondering is, does anyone have the BOD (Biological Oxygen Demand) or COD (Chemical Oxygen Demand) numbers on effluent from distilled tails? I have tried hard to search for this but can't seem to find any information, and the wastewater plant operator is really concerned about it as he doesn't know anything about spirit production. I am truly confident that it will be safe to process, especially in small volumes compared to what they receive every day, but I would love to have some sources or hard numbers I can give him.   7. Salutations! My name is Willie, and I have been distilling for 9 years now, at 5 different distilleries in 4 different countries. I don't know why it has taken me so long to sign up for ADI, but I suppose it's better late than never. I have just taken the role of Head Distiller of a new up and coming distillery in Raleigh, North Carolina, USA, and I can't wait to make all sorts of stuff!
