  1. Invariably, when a customer mentions Barr Hill they believe its base is made from honey. Slightly frustrating that people don't read labels, but that is my thing.

Barr Hill made their gin from honey base and famously won 100 points etc. I hope people begin to get more creative than just gns (nothing wrong with that, though! I just love gin exploration). I'm currently looking at some very fun bases 😁

I'm all for exploring but Barr Hill is made from GNS, at least according to the label. Sweetened with honey though.

  3. Don't have a good answer but I did run into this problem a while back. We used scissors to cut them. They came out uneven but looked good on the bottles. Kind of a pain but fortunately it was a small run of weird bottles.

We only want to remove yeast to satisfy our local water district. They don't have science behind it, they just don't want us dumping yeast. Right now we rack and that works ok, just messy, hard to deal with, and the slurry left over still has some liquid which could be distilled. If we can find a better method of removing yeast (before or after distillation) I feel we can get better yields and have an easier byproduct to deal with.

For now this is our only issue, however, with expansion our water co will likely not let us dump anything putting us much closer to your situation.

I'm curious what the water district is thinking. After distillation, the yeast aren't yeast anymore.

  5. I'm in the distillery so I can't log into the system. I think there is an option to amend your application (not very intuitive to me) then you can go in and add the form.

IMO, it's an unnecessarily complicated way to submit a really simple form.

Directions courtesy of one of my suppliers:

First you sign in to TTB permits online

Then you go to the back and find the original DSP application to Amend.- Likely page 6 or 5.

  6. Last month when I called the TTB they insisted they would only allow submissions through Permits Online. Since my permits were not done online originally it took a lot of question answering to even get to the part where one can submit the form. In the end, a couple of hours wasted on a five minute project. I guess it will be easier next time though.

    Hello All,

Looking for help in locating a vendor that sells electric motors for my mash tun/stripping still. I burnt up the motor yesterday and need a new one quick but haven't had great luck using the google search method. It's a 1 hp 3 phase 240v vertical flange mounted motor. Anyone that can help a guy out? Thanks in advance to all of you.

Who does everyone recommend for printing labels?

I have had a good experience, over many years, with Richmark Label from Seattle. Local printers in my area either know nothing about labels and contract the job to someone else, or have awful customer service.

What should have been done years ago was to create an open source project on a GitHub for the small craft distillers. We are still rolling our own combination of spreadsheets and databases, because every time we check out a commercial solution, they are more expensive, and can't support our current workflow.

I'm in the same boat. Every time I get frustrated with the 2-3 hours I spend at the end of the month (including my winery and all my state reports) I think about buying something.... until I remember the prices.

Nope, but I'm curious as well. I hope it's not another, "Oh we let the still run unattended for 6 hours while we went to take a nap".

I had a consulting client that would leave his still running overnight unattended for 8-10 hours. Completely insane. He also put every bit of the heads and tails into his products and wondered why they tasted so bad.

The separate address is one factor.  But, since the address applies to the building, and not the surrounding grounds, which are deemed to be a part of the same parcel, whatever the addresses may be, TTB may require a fence.  That was the case with the last one I helped get approved, in November or December of last year.  We had a fence, but the specialist sent it to Regulations and Rulings Division and came back with a request asking the height of the fence, why it was different in different places, whether there were gates, why it didn't extend all around the DSP.  What is the Seinfeld line, "Yada, yada."   It got approved, but even with a different address, TTB asked questions.

So, you can't know what TTB will do.  Sometimes its "poof" things just go away and sometimes we have to stick a pin in the balloon of potential objections.  So I'd warn people not to rely on kkbodin's experience with the separate address.  It worked for him, but there is no guarantee it will again.  Now, if you subdivide the land, that is different, because the DSP and residence are not located on the same tract and the restrictions in §5178 no longer apply.

I'm glad you added to this. I was definitely lucky and it could have easily gone the other way. My experience has varied in different TTB regions and with different personnel at different times. One never knows until one knows and this can be very frustrating to new people; and us old ones too.

When I first applied for my DSP, I was originally declined because the TTB agent interpreted any parcel of land on which there was a residence as ineligible. I had to argue that my DSP would be on a piece of agricultural farm property of 60+ acres, and that the DSP would be located in an outbuilding 100 yards away from the residence. It was a heated discussion, since clearly farms almost always have a farmers house on the parcel of land and that is not unusual. In the end they demanded that I put a fence around my DSP in case someone from the residence...? I don't really know. In the end I was approved and everything is fine. But it seems like the TTB has discretion on a case by case basis to interpret the rules differently.

I had a similar experience back in 2005/2006. Once I had a separate address for my outbuilding, poof the problem disappeared, no fence required. Of course nothing on the ground was actually different.

The back label is printed double-sided if that helps. That was the reason as I understood it. If you have a label company you recommend, please let me know.

I have a very similar label. We have been using Richmark Label in Seattle for a long time. They should be able to do this.

, and personally from myself and our whole team here I would like to thank anyone who reached out to representatives or participated in other ways to make this happen.

Thanks for the thanks. We reached out many, many times to our reps. and senators. We also went to DC (two owners, three kids, and a son in law) and met with one of our senators in person to drive home the message. He actually listened for so long I ran out of points to make. It was a fascinating look into the sausage factory, plus a cool tour.

It must be spirits derived from the same type of fruit as the wine to which it is being added.

    §24.225   General.

The proprietor of a bonded wine premises may withdraw and receive spirits without payment of tax from the bonded premises of a distilled spirits plant for uses as are authorized in this part. Wine spirits produced in the United States may be added to natural wine on bonded wine premises if both the wine and the spirits are produced from the same kind of fruit.

One thing I section I came across recently seems contradictory on this point where "alcohol" is specifically mentioned.

§ 4.21 The standards of identity.

    ...

    (g) Class 7; aperitif wine.

    (1) Aperitif wine is wine having an alcoholic content of not less than 15 percent by volume, compounded from grape wine containing added brandy or alcohol, flavored with herbs and other natural aromatic flavoring materials, with or without the addition of caramel for coloring purposes, and possessing the taste, aroma, and characteristics generally attributed to aperitif wine and shall be so designated unless designated as “vermouth” under paragraph (g)(2) of this section.

    (2) Vermouth is a type of aperitif wine compounded from grape wine, having the taste, aroma, and characteristics generally attributed to vermouth, and shall be so designated.

Din is nice for fixed assemblies, it doesn’t hold a candle to the flexibility of triclamp otherwise.

Camlock is an interesting option for hoses, but like Michael says, most everything is triclamp by default.

They do make spring clip triclamp clamps that does make tricky connections easier when you don’t have a third hand.

Worked at a winery/distillery that used camlock; pain in the ass having sexed fittings.
