  1. How did you not have to call this coffee flavored rum? Did you have to get a pre-cola formula approval?
  2. Hey Salish, What concentration of Citric Acid do you use for your cleaning run? Thanks Tom
  3. This isn't qute exactly the same... but we submitted an amendment for a Change in Location back in Nov - it still hasn't been approved. No back and forth or errors that we know of... just not reviewed and approved yet. I've even called and talked directly to the specialist who has no aswer as to why... Seems so random! Tom
  4. Somthing like this? http://www.winebusiness.com/classifieds/usedbarrels/ Tom
  5. I'm sorry if this is a stupid follow on question - but I'm trying to size out some things... I looked at the spec sheet for the Flojet C70 and I really can't tell how to read it - but it looks like the max CFM this thing would need is 2.2... Does that really mean I can get away with a tiny compressor to run it? We don't have a compressor or a lot of spare room. Can someone confirm how little air this uses? Thanks!!
  6. Anyone use The Vintner Vault? Good or Bad Experience? Specifically any opinion on these tanks? http://www.thevintnervault.com/product/4257/400-L-Variable-Capicity-Wine-/-Fermenting-Tank.html Or this pump? http://www.thevintnervault.com/product/4441/The-Vigor-Mini-.html Or this hose? http://www.thevintnervault.com/product/4263/1.5-%22-Kanaflex-Kanaline-FW-Fully-Barbed-Hose.html Thanks so much! Tom
  7. Deleted due to accidental double post.... Sorry!
  8. Thanks Kristian, that's exactly what I'm trying to do. But in permits online, it asks me to choose whether that name is an Operation Name (DBA) or Labeling Trade Name.... I want to understand the difference between the two - and make the right choice. Tom
  9. I can't find a definition of the difference between a Labeling Trade Name and an Operating Name (DBA). Can anyone help me out? Thanks in advance! Tom
  10. I just re-read your op and realized we didnt raise as much as youd asked about... so not sure i can actually help.
  11. Friends and family for us.... we arent up and running yet, but we did get some money.
  12. Hey Crafters, I signed up for the newsletter and received your catalog... it talks at a high level about your custom process, but doesn't talk about any stock options you have. I thought I remembered you saying in another post, that along with custom bottles, you carried the standard favorites... am I remembering incorrectly? Thanks Tom
  13. Thanks for all the replies folks! Really appreciate it.
  14. Yes, I understand the purpose of a floor drain. I was curious about rules that might dictate their use... we are looking at a location that supposedly has a ton of steel and other things embedded in the floor that precludes cutting one into the existiing floor... so I was considering building up the floor to install drainage - but I'm not sure if that "works" or if there would be some reason not to do that. There is plenty of drain access in walls and such... we'd just need to elevate the floor.... Thanks Tom
  15. Sorry... drains... not drsins...
  16. Are there Federal, State or local requirements that dictate the use of floor drsins. I know everyone wishes they had more... Im looking for any rules that require them. Thanks! Tom
  17. I don't think you can use "80 proof" instead... only in addition to. I believe you have to at least have the ABV, and the proof is optional. Can't have proof without ABV. Or maybe I'm totally missing the point of your question. ALCOHOL CONTENT • REQUIRED nAlcohol content must be stated in % alcohol by volume, i.e., “ % ALCOHOL (ALC) BY VOLUME (VOL)” nFor products containing solid material, the alcohol content must be stated as “BOTTLED AT % ALCOHOL (ALC) BY VOLUME (VOL).” (“Rock and Rye” is an example of a product containing solid material. It contains rock candy or sugar syrup and often fruit)Vol 2 1-3 04/2007 • OPTIONAL Alcohol content may be expressed in degrees proof in addition to the required alcohol by volume statement. If the proof is shown it must appear at least once on the FRONT of the container with the alcohol by volume statement
  18. Mechanical Hood I believe, but no mention of fire suppression in the hood itself... I believe their thought is about removing heat - not vapors... but I still don't know what section of what document "requires" it... Thanks Tom
  19. Does everyone out there have a type II hood above your stills? Is this a common requirement by building officials? I've engaged our code officials early (I don't even have a lease yet), and they seem open to not requiring a hood "as long as I can build a case..." But I don't even know where to start? What documents/codes would require the use of a hood? Has anyone dealt with this and successfully "built a case" against requiring a hood? Thanks in advance for any help! Tom
  20. Anyone ever heard of a city not permitting direct fired stills? Any reason to expect tthere'd be trouble doing it? Tom
  21. For those of you running immersion heat... What size is your boiler charge, how much power do you use for heatup, and how much power do you use for the collection portion? Are you happy? Thanks! Tom
  22. Is your proof statement in parenthesis? I think it needs to be separated from the ABV statement.... from the BAM which I know isn't the CFR... Alcohol content may be expressed in degrees proof in addition to the required alcohol by volume statement. If the proof is shown it must appear at least once on the FRONT of the container with the alcohol by volume statement AND: Be set off by parentheses, brackets, dots or otherwise distinguished from the alcohol by volume statement May not be more prominent than the alcohol by volume statement
