  2. Excellent. These are the sorts of questions that I didn't even know to ask. Wholesaler/distributor. I think the idea is to tweak and re-brand a bulk quantity of base spirit. Definitely not for private use.
  3. I'm relaying this from an associate who wants to get into a private-label partnership with a contract distiller. He's being told that he cannot receive product samples without certain licensing. Of course, he's not going to just charge ahead without knowing what will be inside the bottle. Could someone help clarify this? What licensing is needed for a contract/private label arrangement? Thanks in advance.

  5. In evaluating equipment suppliers, I see that Bavarian offers centralized digital control. In my head, this sounds great. It conjures up visions of remote monitoring and adjustment, automation, reduction in labor, etc…. But this is in my head. Does anyone have any practical experience with their system? How does it work out in practice?

  7. I get the economics of grain. I'm cool with the idea of gelatinization and enzymatic saccharification. I'm in New York, however. We're a modest wine-producing state. I wonder about the economics of trying to contract with nearby wineries for their lees, and running exclusively with grape dregs? Is this plausible or laughable? Does anyone do this?
  8. Hi, all. I'm located in Central New York. Though it is not my day-job, I've been a successful and decorated brewer and meadmaker for decades. With advancing years, I've been called upon more often to judge than to produce. Within the limits of the law, I've long since familiarized myself with distillation as well. With all this behind me I have confidence in my grounding in both the art and the science. One thing I've never considered until very recently was trying to leverage this experience, and scale it up to something like commercial production. With this in mind, I've found this forum. It looks like the right place to dip my toe in the mash. --Dan
