  3. Any suggestions on how to really clean the smell out of plastic totes? what cleaning products work for this...the smell I'm dealing with is peperoncini from olives.. It's a great smell if you are making martinis.. but not for brandy!! Nick

  6. Almost all the French Calvados distilleries make a product they call "Pommeau". Its usually made with 1 year old apple brandy that has aged in oak, mixed with sweet cider.. 2/3 cider and 1/3 barrel strength (120 to 140 proof) brandy.. then aged back in oak for 2 to 3 years. the percentage is 17% or 18% like porto or sherry.. The sweet fruitiness of the cider is preserved and then there is a wonderful vanilla, caramel, smokey flavor from the wood.. I don't think you can call it Pommeau unless it's made in the Calvados area of France.. Nick

  12. This has been my first year making apple brandy legally, I'm loving it.. I think the timing of a trip to France at this point would be great.. I'm looking for suggestions on time of year.. and names of distilleries that would be open to Visitors asking questions. I hope to be traveling with a french friend. Nick

  14. Making apple brandy in a pot still in Vermont.. Question.. If I plan to age the brandy for 5+ years.. Knowing that it's in oak for a longer time, should I distill to a lower proof to preserve flavor? Nick
