  1. We're just starting our aging program... but I'm already thinking about things down the line. Anyone got any tips or tricks for emptying 53gal barrels? I think our plan is to fashion some kind of rack they can roll on out of 2x4's and just empty them over a 350 gal stainless steel tank... i know thats gonna take forever though due to the exchange of liquid and air when emptying. i know there are racking stems that wineries use... just curious if anyone else has a trick setup.   3. Hello, first post! These are Kelvin Cooperage #3 char. 25 gallon as mentioned in the title. Held 100% wheat whiskey for 2 years (some 2.5, some 1.92 yrs). There are 4 of these dumped 3/9/21 I also have 5 of these barrels that were used for ageing gin. Dumped 2/24/21. These held 100% wheat whiskey for over 1 year, and the gin for about 1.5 years (accidentally). Additionally there are still 4 barrels harvested 11/18/20 that are available, (and a baker's dozen more destined for furniture or firewood): Edit to include: $200/each for fresh dumped 3/9 $150/each for fresh gin barrels $100 for any and all else Located near the middle of the map, USA
  4. Hey all, I've been running a 150 gal pot still, soon upgrading to a 300gal. Whenever I have down time I find myself on here trying to further educate myself. When putting a product into a barrel, I'm reading that a bit of heads and or tails helps with the chemistry or the full flavor of a barreled spirit. I fill mainly 53's thus many years of maturation. It takes me 3x 300gal ferments to fill +/- a 53gal barrel. I do my cuts in 5 gal Korny Kegs. I then make my hearts cut, filter and cut to X proof (right now rye at 113p) and fill the barrel. My hearts cut is clean and if heads or tails are present I usually don't add em. Clear it taste fantastic. In your opinion how much heads/tails would you include in your cut? Is this adding to the mouthfeel, more flavor depth or what? If there are any links or books I could further educate myself with please include them. Thanks everyone, y'all rock!

  6. We are a craft distillery that is only 3 years old. We have an excess of 5 gallon barrels for bourbon and rye whiskey that we are considering transferring into 53 gallon barrels. 1) Will this help to round out some of the "young" characteristics or unpleasantness that you find in a 5 gallon barrel - hoping to get a better mouthfeel and less "campfire" profiles in the transfer if we let it rest for an additional 1-2 years in a 53. 2) New or Used 53 gallon? Our concern is that a new will not help to round out some of the over-oaked or campfire characteristics, but a new barrel would be more attractive from a Straight bourbon standpoint. 3) Has anyone ever done this and at what success rate? Thanks in advance.

Reference Doc below https://www.regulations.gov/document?D=TTB-2018-0007-0001 Notice No. 176: Modernization of the Labeling and Advertising Regulations for Wine, Distilled Spirits, and Malt Beverages 1. Subpart A—General Provisions Proposed subpart A includes several sections that have general applicability to part 5, including a revised definitions section, a section that defines the territorial extent of the regulations, sections that set forth to whom and to which products the regulations in part 5 apply, a section that identifies other regulations that relate to part 5, and sections addressing administrative items such as forms and delegations of the Administrator. Proposed § 5.1, which provides definitions of terms used in part 5, has some changes from the regulatory text that appears in current § 5.10. In addition to the proposed amendments discussed above in section II B of this document, TTB proposes to modify the definition of “age” to simplify it and to make clear that spirits are only aged when stored in or with oak. The wood contact creates chemical changes in the spirits, which is the aging process. Thus, for example, spirits stored in oak barrels lined with paraffin are not “aged.” Additionally, TTB proposes to add a definition of “American proof,” which cross references the definition of “proof.” The term “American proof” is used in some circumstances to clarify that the proof listed on a certificate should be calculated using the standards in the part 5 regulations, not under another country's standards. TTB proposes to amend the definition of “distilled spirits” to codify its longstanding position that products containing less than 0.5 percent alcohol by volume are not regulated as “distilled spirits” under the FAA Act. TTB also proposes to add a definition of “grain,” which would define the term to include cereal grains as well as the seeds of the pseudocereal grains: amaranth, buckwheat, and quinoa. TTB has received a number of applications for labels for products using pseudocereals, and TTB also notes that the FDA has proposed draft guidance allowing the seeds of pseudocereals to be identified as “whole grains” on labels (see 71 FR 8597, February 17, 2006). Finally, TTB proposes to define the term “oak barrel,” which is used with regard to the storage of certain bulk spirits. TTB and its predecessor agencies have traditionally considered a “new oak container,” as used in the current regulations, to refer to a standard whiskey barrel of approximately 50 gallons capacity. Accordingly, TTB proposes to define an oak barrel as a “cylindrical oak drum of approximately 50 gallons capacity used to age bulk spirits.” However, TTB seeks comment on whether smaller barrels or non-cylindrical shaped barrels should be acceptable for storing distilled spirits where the standard of identity requires storage in oak barrels.

  17. Hi there, I have 5 gallon barrels for sale. These barrels are unused but were made from the staves of full sized barrels that could've held tequila or bourbon. The barrels may need to be re-hydrated but are in great condition. They are branded with our company logo, Balcones, but otherwise are free of any other markings. In the past we have used these types of barrels for our Baby Blue blue corn whisky, but have outgrown the 5 gallon barrel size. I have about 80 pallets with each pallet containing 60 barrels. I am asking $75/per barrel but willing to negotiate the price per barrel for higher quantities. Prefer to sell by these by the pallet since they are already packaged accordingly.   24. Forumites, I have received reports regarding Oak Wood Barrel Co. One of our clients ordered and paid them in June with the company guaranteeing delivery in July. They still have yet to receive their order. They have been contacted numerous times via E-Mail and landline. The client has been given a lot of excuses the few times they could actually reach them. Now they no longer answer their phone but instead have a service that when you call they tell you that they are in a meeting. They have yet to be called back. At the minimum they are operating their business poorly, at the maximum this could be a scam.
