TL;DR: I'm in the beginning throws of creating a business plan. What part of your business plan did you struggle with the most and how did (or didn't) you overcome it? After enough research, I've come to terms that I won't be a distillery owner for at least 18 months, if not longer. I still need money coming in. I need to save. I'm finishing up my business plan and having a major problem finding comps to defend my valuation. Everything I find is publicly traded and either too good or too bad to appear realistic. Any ideas on how to properly valuate my business and any leads on some comps I can include for my investors?

Hello, My business partner and I are finishing up the financials for our business plan for opening up a small batch distillery. Our location and marketing plan call for a tasting room, distillery tours and merchandise available for sale at our facility. We have had great success modeling product sales and expenses from contacts within the ADI, but have not run into any examples of projections of revenue for merchandise and other non-product related sales. Hello, y'all I'm going for it, and I need y'all to try to talk me out of it. Just kidding, sort of. I've been putting together a business plan (which for me consists of staring at a computer screen for and hour and then typing one sentence) to start an artisan distillery. I am currently in the throws of making some big decisions regarding the operation, and this forum is priceless for helping me put these decisions into perspective. After digging into many posts related to start ups, production, volume, sales, etc., I cannot locate any data - anecdotal OK - related to the amount of production / distribution (whether self or through distributor) / tasting room sales, etc. that a start up distillery had in Y1 and a comparison of same to Y2 or Y3. I'm not talking revenue - just cases (or bottles/barrels put up if applicable). I'm close to receiving approval on a loan for a small downtown (town=6000 people) Main Street location distillery and tasting room in (touristy) CO. I plan to produce vodka and two liqueurs and have
