There is a book by Hubert Germain Robin. It's the only book I know of dedicated to the subject. I recall "Whiskey technology, production and marketing" having a pretty in depth section on aging, and is absolutely worth finding a copy of if you can, for a number of topics.

Other than Huber's book, the International Barrel Symposium books are the best resource I have found.

you can request a copy from ISC. they sent me the pdf first (inventory of print copies was low/out) and then later I asked again, and they sent me a print version
