If you are using intellectual property (names, for example) that belong to someone else, then when you apply for label approval, TTB will require that the owner of the intellectual property provide a letter stating that it authorizes you to use the name when bottling for their account. How you structure the deal is a matter of business, but you probably want to avoid the organization acquiring title, because then they would have to sell it, probably triggering state licensing requirements and federal wholesaler permit requirements if they wholesale. Talk with attorneys about structuring it as a royalty deal in which you pay the organization a per case fee for the use of the name.
