What percentage of what you make, do you sell. (Whiskey only please!)

1. I am a teacher at MSU Denver (University in CO) and I am trying to get a sense of what percentage of the whiskey made in-house, is sold to the public within 6 years. Not sourced whiskey by the way. Just whiskey that you make, that is sold to a distributor or directly to the public (tasting room or retail) from the distillery. And just within the first 6 years of aging. Thanks for considering sharing.
