Hey bluestar,

We currently only have normal dent corn. It is not organic as our farm is not organic certified.

Thanks,

Adam

Figured it was yellow hard dent, but is it feed or food (low or high starch)? Also, presume the barley is unmalted, have you had any of it malted anywhere, in or out of Illinois? Or can we send a sample to our maltster for evaluation?

Hey bluestar.

It is feed/field corn w/ germ in. The barley is currently unmalted. We are working with a craft malt house and hope to have about 4,000 lb malted in the next month or so. We will also be malting a portion down here....all of those will be specialty malts that are smoke dried though!

Where is the craft malt house?

Hi 3 Stacks,

Our corn is currently not GMO free. We are working some GMO free varieties into our next rotation but have to find the right spot. A breezy day in the middle of July can quickly turn a non-GMO field into a GMO field if  your neighbor has a GMO variety out!

To answer your follow-up question, the last number I read was that non-GMO varieties constituted around 5% of the United States' annual corn output. That being the case, non-GMO corn can be pretty tough to come by, based on where you are located. I believe around the same time I read the non-GMO figure, I also read that almost all of the big Kentucky distilleries had switched exclusively to GMO corn because of lack of availability/price of non-GMO.
