If we overshoot below our intended proof, what are we permitted to use to bring the ABV back up to where it should be? I've looked unsuccessfully for a reference, so if it's obvious, apologies in advance but I haven't seen it. Recommendations and ideas welcome. MGL Posted November 23, 2017 Share Posted November 23, 2017 It's very simple. You need to use the same spirit that is approved on the label. If you add a little whiskey to rum, it's not rum anymore.
